Spinach soup with pan fried cod 🍽🍽⁣

ingredients: ⁣
• Cod fillet⁣
• 150 g frozen or fresh spinach⁣
• 30g cream cheese⁣
• 3.5 dl chicken broth ⁣
• ½ chopped onion⁣
• 1 garlic cove⁣
• Butter or oil for frying⁣
• 25g bacon ⁣
• Roasted sunflower seeds⁣

For the soup:⁣
1. Fry onion and garlic in a pot with butter. Once soft add spinach and stock. ⁣
2. Let this simmer for 1o minuets. ⁣
3. While this is simmering, fry cod fillet and bacon. Roast the sunflower seeds in a dry pan. ⁣
4. When the soup is done add it to a blender and add cream cheese. Blend and taste, add salt and pepper. ⁣
5. Place the cod in a bowl and add the soup, sunflower seeds and bacon. ⁣

This soup is enough for about 3-4 servings. ⁣

🍽️ Keto Broccoli Cheesy Bread 🍞🔥
======== 📔 Ingredients =========
3 c. riced broccoli
1 large egg
1 1/2 c. shredded mozzarella
1/4 c. freshly grated Parmesan
2 cloves garlic, minced
1/2 tsp. dried oregano
Kosher salt
Freshly ground black pepper
Pinch crushed red pepper flakes (optional)
2 tsp. freshly chopped parsley
======== 📜 Instructions =========
Preheat oven to 425° and line a large baking sheet with parchment paper. Microwave riced broccoli for 1 minute to steam. Carefully ring out extra moisture from the broccoli using paper towel or cheese cloth.
Transfer broccoli to a large bowl and add egg, 1 cup mozzarella, Parmesan, and garlic. Season with oregano, salt, and pepper. Transfer dough to baking sheet and shape into a thin, round crust.

Bake until golden and dried out, 20 minutes. Top with with remaining 1/2 cup mozzarella and bake until cheese is melted and crust is crispy, 10 minutes more. Garnish with parsley and pepper flakes if using.

Keto Alfredo Chicken with Zoodles 🌱

Ingredients:
4 small, fresh crisp zucchini, spiralized into zoodles
4 small chicken breast fillets
2 Tbsps avocado oil, or olive oil, divided
2 fresh garlic cloves, minced
1 tsp chili flakes, or to taste
sea salt and fresh ground black pepper, to taste
1.5 ounces organic cream cheese room temperature, OR may use 1.5 ounces of coconut cream for a non-dairy option (but the small amount of cream cheese is pretty awesome here)

Instructions:
Place zucchini noodles on paper towels and sprinkle with a tiny bit of sea salt.
Heat 1 Tablespoon oil in a large saute pan over medium heat. Add in chicken breasts then season with sea salt and pepper. Cook for about 4-5 minutes on each side, or until just cooked through and no longer pink in the center. Set aside on a plate to rest for a few minutes, then slice.
Gently pat dry zucchini noodles with paper towels.
Add remaining oil to the pan and cook the minced garlic for 1 minute, until fragrant.
Add zucchini noodles into your hot pan and saute for about 2 minutes.
Add in cream cheese, chili flakes into the hot pan and stir gently to combine. Season with sea salt and pepper to taste.
Dish up zucchini noodles equally onto 4 plates, and add sliced chicken on top.

GOOD MORNING ☀ 🥚🥑🥓 Breakfast for absolute champions! 💪🏼 this morning I’ve made scrambled eggs, streaky bacon, sautéed mushys and of course, AVO! To scramble my eggs I always crack 2-3 eggs into a non stick pan adding a big dollop of butter and mix throughly then put over low-medium heat and stir constantly until they are creamy and fluffy!
