Has some modifications, including heat plate, gasket around the cooker, latches to keep the lid secure.

Has some rust but that comes off easily. Just oil the smoker and let dry.

Here’s pitmaster Jim making pork belly burnt ends. Cube em, hit em with a good rub, and let them smoke for a few hours until tender. Then add some brown sugar, honey, hot sauce, and butter. Cover and put back on the smoker for a couple of hours. Remove, add a glaze, put back on the smoker to caramelize and enjoy!
If there’s leftovers, chop em up and make pork belly tacos with mango!
