๐ฅ๐ฅ HiFi Breakfast Sheet-Pan Bake
Fuel up. No excuses. Real food that works as hard as you do.
Serves: 8
Ingredients
8 Flour Tortillas (Optional egg wraps, Lavash, Or a low carb tortillas)
Meat Layer
16 oz ground beef
(or ground turkey for a leaner option)
Seasoning:
ยฝ tsp salt
ยฝ tsp pepper
ยผ tsp garlic powder
ยผ tsp paprika
Potato + Veg Layer
800g Yukon gold potatoes, diced
1 yellow onion, diced
2 tbsp olive oil
Seasoning:
ยฝ tsp salt
ยฝ tsp pepper
ยผ tsp garlic powder
ยผ tsp paprika
Egg Layer
4 whole eggs
1 cup egg whites
1 cup low-fat cottage cheese
(I didn't use cottage cheese on this video, but I HIGHLY recommend for creaminess + protein.)
90g shredded cheese
Seasoning:
ยผ tsp salt
ยผ tsp pepper
ยผ tsp garlic powder
ยผ tsp paprika
Yogurt Sauce
245g Greek yogurt
Cholula, to taste
Seasoning:
1 tsp garlic powder
Salt to taste
Instructions
1. Prep the base
Preheat your oven to 400ยฐF. Get a 9ร13 sheet pan.
2. Roast the potatoes + onions
In a large bowl, toss the diced potatoes and onion with olive oil and seasonings.
Spread evenly on the sheet pan and roast for 20โ25 minutes, or until lightly golden.
3. Add the meat
Remove the pan, crumble the ground beef over the potatoes, season, and return to the oven. Roast 10โ15 minutes until the beef is cooked and edges get crispy.
4. Pour in the eggs
In a bowl, whisk together:
eggs + egg whites + cottage cheese + egg-layer seasonings.
Pour evenly over the pan and top with shredded cheese.
5. Bake to finish
Bake another 10โ15 minutes, or until the eggs are set to your liking.
Assemble the HiFi Breakfast Burritos:
Lay your tortilla flat. Spread 1โ2 tbsp of the yogurt sauce down the center.
Add 1 generous scoop of the sheet-pan bake on top (Make sure to divide into 8 even servings... and roll tightly
