Have you ever heard the phrase, “Eat the Rainbow?” When it comes to nutrition, eating the rainbow involves regularly eating fruits and vegetables of different colors.

According to healthline.com - “Plants contain different pigments, or phytonutrients, which give them their color. Different-colored plants are linked to higher levels of specific nutrients and health benefits.”

Focusing on eating a variety of colored fruits and vegetables will increase your intake of different nutrients to benefit various areas of your health.

By keeping these foods readily available to eat, you are more likely to grab them as a healthy snack if you are in a hurry.

Grab a watermelon this week before they go out of season because this skinny watermelon mojito recipe is 👌!

Here are the details:

1 cup watermelon, seeded and roughly chopped
1/2 lime, juiced
4 mint leaves
Ice
1 fl. oz. white Bacardi Rum
Club Soda

1. In a blender, process watermelon until liquefied. Pour into a glass.
2. In a small bowl, muddle together lime juice and mint leaves. Pour mixture over watermelon.
3. Fill the glass with ice and top with rum and club soda.
4. Garnish with mint leaves and watermelon wedge if desired.
5. ENJOY!!!

It is easier to make good food choices when you have a plan … and easily accessible foods. Having those quick grab and go snacks and meals helps to keep you on the right track. Here are a couple of tips to start planning your meals:

1. Organize your pantry and take note of what you have on hand. You don’t want to go out and repurchase items you already have!
2. Make a plan - set aside an hour or two to write out a meal plan and shopping list. Since you’ve already perused your pantry, you can start with meals that include those items you already have. Have 10 cans of tomatoes?? Let’s add a meal that contains tomatoes. 😉
3. Vary your meals. It is easy to get in a rut of making the same thing over and over but it doesn’t have to be this way!
4. Shop for in-season produce when possible.
5. Stick to your list! Grocery stores know how to strategically place enticing items. By committing to your list, you are more likely to stick to the plan.
6. Containers with compartments are your friend. Having the different compartments naturally helps with portion control.
7. Use herbs and spices. Want to add flavor and variety without added calories …. spice things up!
