Oh my 😍 one of the best burgers I've had! I'm always looking for healthy options to incorporate into my "diet" I've never really been a huge fan of red meat, however I enjoy a burger or steak here and there. I also like to incorporate vegan meals.

For the most part, vegan burgers either contain soy, which I choose not to have because it triggers OR the burgers are lack a sufficient amount of protein and essentially fall into my carbohydrate calorie bracket. 🙄

This burger is quite different! The Beyond Meat burger is completely vegan, has NO soy or gluten and is and has a whopping 20g of protein per 4oz patty 😱😄

Seasoned with The Spice Beast Big Buzz Coffee Rub seared 3 min each side served in top of a garden spinach herb wrap, beet hummus and arugula, topped with avocado sprinkled with smoked paprika

It was freezing outside yesterday but was 🔥 in my kitchen!!! Restaurant quality cooked right at home.

Fig Balsamic Chicken Caprese with a Twist

Outside: The Spice Beast Jacked Garlic & Onion oregano, rosemary, Olive U Fishkill fig balsamic vinegar

Inside: fresh basil and garlic, fresh mozzarella, Campari tomatoes, Boars Head Prosciutto de Parma

Instructions

Preheat oven to 425
Butterfly the chicken breast
Season with Jacked Garlic & Onion, oregano, rosemary
Layer inside with garlic, basil, mozzarella, prosciutto, tomatoes, more basil and garlic
Seal chicken breaths with toothpicks
Pan sear in EVOO
Place in aluminum tray, cover and bake for 15 min
Remove toothpicks
Drizzle with Fig Balsamic Vinegar

The pic on the left was taken in the Summer of 2003 on a beach in the Island of Ibiza. It was just me and my bro before either of us had kids. Damn that was a hella fun trip! 🎉🍹💃

So here's the thing, I've always been confident enough to rock a bikini no matter my size and not pay attention to others points of views. Sexy is more attitude than anything and beautiful yes I was 😊 But this was around the time I started having circulation problems to then be diagnosed with Raynauds syndrome. I had chronic sinusitis, back pain, major fatigue, joint pain and more. 😔 My diet was poor considering mostly of take out, fried foods, frozen dinners and so on. I definitely was NOT physically active either. It wasn't until 2009, when my symptoms were at its worst that I was diagnosed with Systemic Lupus and Alopecia Areata.

When did I really begin taking charge of my health? In 2012 when I was pregnant with my little man, because it was at that point that I wasnt just living for myself. My little man means the world to me ❤ I knew in order to be there for him how I wanted to be and how he needed me to be, I needed to make a CHANGE.

But why the hell did I wait so long? Why wait till things are at its worst? Why wait for it to matter to others? Why think that just cuz I'm young, my health could wait? 🤔

So here I am, 37 years YOUNG, healthier and happier than I was at 22 years old 😎

LOVE potato salad BUT I personally dont have it often because potatoes are not nutrient dense and most have a high glycemic index, meaning that their carbohydrates are quickly broken down into sugar, causing blood sugar and insulin levels to rise rapidly.

I was at a restaurant with my mom on mother's day and had a mock potato salad which was sooooo delicious. Because I love to try new things, I decided to make a similar dish at home.

If you have not tried zucchini noodles you are MISSING OUT!!! So damn delicious! Adds more filling volume to your meals with little extra calories. Simple to prepare too.

Spiralize the zucchini (you can buy premade but you save money doing it yourself)

Sautee thinly sliced garlic in coconut oil

Toss in zucchini noodles and sautee for about 5 min. Add salt and pepper to taste and DONE!

Tonight I added sauteed tomatoes, and had with 2 eggs and avocado sprinkled with a pinch of pink Himalayan sea salt and smoked paprika

I feel GREAT!!! I haven't done this particular program in its entirety since the beginning of last year. I couldn't do one of these isometric chin-ups last year on the bar. I used resistance bands instead. Today said to myself, I'm going to try it and see how many I can do, what's the worse that can happen? I was able to do SEVEN of these without stopping!!!! Then did another 3 after a 5 sec break 💪🏻

Its an awesome feeling the be able to do something that I never thought would be possible. Start somewhere, because I promise you sooner or later you will surprise yourself with what you are able to accomplish.

Here is a side-by-side of the same workout from LAST year February 24th to today.

Don't ever think that you can't improve and don't ever let your limitations stop you. My balance is terrible and it has to do with physical limitations. I am completely deaf in my left ear which drastically affects my equilibrium and the burn scars on the right side of my feet affect my balance a lot as well.

Despite physical limitations that are beyond my control, I have still been able to improve.

Never did I think I would be working from home, sharing my love for health and fitness and coaching others to reach their personal goals.

I never had the motivation to workout at home.
I wasn't tech or social media savvy.
I had a small group of friends.
I refused to be a salesperson and use products that weren't beneficial to my health.

But here I am...the most consistent I've ever been with working out, I am NOT a salesperson, my health is the BEST its been and I have met some of the most amazing people in my life online

If you would have asked me to do one of these races 2 or even 1 year ago I would've laughed in your face 🤣🤣🤣 honestly I used to look at these and be like nope no way can I do that.

When Shakira said she was doing it for the second year and invited the team to do it with her I didn't hesitate. After I signed up, I did say damn what did I just get myself into 🤔 lol but I'm not one to back down from a challenge even though I had my doubts about some of the obstacles.

Its been a little over a year since I decided to begin working out at home and it has been one of the BEST decisions ever!! To have been able to get myself in the best shape of my life and be able to accomplish what I did today AMAZING!!!!

It felt HELLA good to cross that finish line!!! To set my eyes on a goal, go in full force and CRUSH it! Can't wait for the next one! Keep an eye out cuz I will be entering into a BEAST AND SUPER spartan race in the near future 😜😜😜 AND signing up little man for the Kids half mile 👩‍👦🏃‍♂️🏃‍♀️😁
