Breakfast or Lunch doesn't matter 😜
Arugula with tomato, avocado, soft boiled eggs, and a balsamic yogurt drizzle topped with oregano and red pepper and a little drizzle of olive oil.

To make the eggs, I boil the water, add eggs, cook for 7 min and then let it cook in an ice bath.

Yogurt drizzle is just a scoop of Greek yogurt with balsamic mixed in!

Avocado Caprese Salad 🍅🥑

This makes avocado a fitting accompaniment for our fitness + muscle building, or muscle retention + weight loss goals!

makes about 4 servings

Ingredients:
1/2 of a large-ripe avocado, carefully peeled
juice of a fresh lemon
1 lb. ripe mixed tomatoes, chopped
8 oz fresh mozzarella, pulled and torn into bite sized pieces
1/3 cup homemade pesto sauce, recipe below
1/2 tsp sea salt flakes, or to taste
1/2 tsp freshly ground black pepper, or to taste

Mango Mandarin Sesame Shrimp
Salad

Ingredients:

- 1 ½ - 2 pounds uncooked shrimp - shelled and deveined, (tail-on is okay)
8 cups chopped romaine - or green leaf lettuce
1 avocado - pitted and thinly sliced
1 large mango - diced
- ½ cup mandarin oranges
1 red bell pepper - diced
⅓cup shelled edamame
- ¼ cup cilantro - roughly chopped
- sesame seeds - for topping (optional)
Dressing
- ½ cup oil - (vegetable, canola, or peanut work well)
⅓ cup rice vinegar
¼ cup soy sauce - (I use low sodium)
2 tablespoons sesame oil
1 tablespoon sugar
1 tablespoon minced garlic
- ½ teaspoon ground ginger - (more to taste)

Instructions
1. Combine all dressing ingredients in a blender and puree until smooth. Pour 1/3 of the mixture into a large resealable bag. Add shrimp to bag, seal, and chill for 10-30 minutes. Cover and chill the remaining
sauce to use for a dressing.
2. Discard marinade and grill shrimp over medium heat OR sauté in a skillet over medium heat on the stove for 4-8 minutes until shrimp turn pink.
3. Assemble salads with lettuce, avocado slices, mangoes, mandarin oranges, bell peppers, and edamame. Top with shrimp (you can remove the tails first if desired). Serve with reserved dressing and garnish with cilantro and sesame seeds.

INGREDIENTS
For the chicken
4 boneless skinless chicken breasts thin cut
1/3 cup all purpose flour
1 1/4 teaspoons salt
1/2 teaspoon pepper
2 eggs
2 tablespoons milk
1/4 cup olive oil
For the sauce
4 tablespoons butter divided use
1 lemon thinly sliced
1 tablespoon all purpose flour
1/2 cup white wine
3/4 cup chicken broth
1 tablespoon lemon juice
salt and pepper to taste
2 tablespoons chopped parsley

INSTRUCTIONS
For the chicken
Place each piece of chicken in between two pieces of plastic wrap. Pound with the flat end of a meat mallet to create thin cutlets.
Place the flour, salt and pepper in a bowl. Mix until combined.
Place the eggs and milk in a small bowl and whisk until smooth.
Heat the olive oil in a large pan over medium high heat.
Dredge each chicken cutlet in the flour mixture, then dip in the egg.
Place the chicken breasts in a single layer in the pan.
Cook for 4 minutes per side, or until golden brown and cooked through.

CORN, TOMATO & AVOCADO SALAD! with Cilantro Lime Dressing; drizzle this on everything!

Ingredients

2 cups of cherry tomatoes, halved 3 ears of corn, boiled and sliced off the cob *

2 avocados, cubed

1 , sliced (optional) * remove seeds for less spice!

* For the corn: peel the corn on the cob and remove the silks or skin. Fill a large stockpot halfway with water and bring it to a boil. Drop the corn in for ~7 minutes and cover with a lid. Remove the corn, set it on a plate to drain, and allow it to cool down. Feeling a little extra? Brush it with butter and season it with a sprinkle of salt and pepper. Once cooled, place it vertically against a solid/flat surface and use a knife to slice the corn off the cob.

Cilantro Lime Dressing (makes ~1 cup, 4-6 servings)

1 + 2/3 cups fresh, organic cilantro

2 garlic cloves

2 teaspoons of honey or agave

1/4 cup fresh lime juice

1/2 teaspoon of sea salt 1/2 teaspoon ground coriander

1/2 cup extra virgin olive oil (or avocado oil)

1/3 cup Skyr or Greek yogurt (optional)

Instructions

In a blender or food processor, place the cilantro, coriander, lime juice, agave syrup, garlic, and sea salt and pulse together.

Slowly pour in the olive oil and process until smooth. If using a food processor, add the olive oil at the end while it's still running. IF you want to make it creamy; add the Greek yogurt along with the olive oil.
It goes from vinaigrette to creamy dressing. Pour over the salad and mix well!

1 tbsp paprika

4 tbsp butter

6 oz softened cream cheese

Asparagus Stuffed Chicken

Ingredients:

*4 Skinless boneless chicken breasts about 1 1/2 lb.

* 1 Tsp Italian seasoning mix

* 1 Tsp Garlic Powder

* 1 Tsp Smoked Paprika

* Sea salt and pepper

* 12 Asparagus stalks end trimmed

* 1 oz Sun-dried Tomatoes chopped

* 4 slices Mozzarella Cheese

* 1 Tbsp Olive Oil

Instructions:

1. Preheat your oven to 400 F.

2. Place the chicken on a clean chopping board and sprinkle with Italian seasoning, garlic powder, paprika, salt, and pepper.

3. Start cutting each one lengthwise to create the pockets. Be careful not to cut all the way through.

4. Add 3 sprigs of asparagus and a couple of pieces of sun-dried tomatoes to a mozzarella slice, then roll it to hold them inside. Stuff the chicken breasts with it.

5. Close the pocket with a toothpick. Heat oil in a large and cast iron skillet over medium-high heat.

6. Add in the chicken and sear it until nicely goldenbrown, about 3-5 minutes per side.

7. Bake the chicken for 15-20 minutes, or until the cooked through and no longer pink in the inside.
