This is a great salad post for World Vegan Day, which I’m a day late for! Better late than ever! This is a great bowl for taste and plant based nutrients…
🍠 Roast sweet potato wedges after coating them in EVOO & Cajun seasoning
🍔Prepare your veggie patty: mash 1 can of chickpeas with ½ cup whole oats, ¼ cup diced red bell pepper, ¼ cup chopped green onion, ¼ cup shredded carrot, 1 Tbsp nutritional yeast flakes, 1 tsp salt, 1 tsp garlic powder, 1 tsp paprika, 1 tsp dried parsley, 2 Tbsp olive oil and 3 Tbsp water. Let stand for 20 minutes, form Patties, and then bake on cookie sheet (lined with parchment paper) for 40 minutes at 375.
🌽 Boil ears of corn and cut kernels off
🥒 🌶 Dice cucumbers and red peppers
🥬 Layer on top of baby spinach.
Deli-style dressing:
1/4 cup Red Wine Vinegar
1/4 cup Honey
1/4 cup EV Olive Oil
1 tablespoon Dijon Mustard
1 teaspoon salt
1/3 teaspoon pepper

Yay for BRACHA bowls! 🙏🏼
Step 1️⃣:
In a large pan, roast sweet potato cubes, carrots and onions (coated lightly in EVOO, salt & garlic) @ 425 for 40 minutes!
🔥 🥕 🔥 🧅 🔥 🍠 🔥
Cook up some yummy quinoa in the instant pot (makes it happen quicker!)
🍚🍚🍚🍚🍚🍚🍚🍚
Dice up cucumbers, kale and romaine to add crunch to the salad!

Best dressing:
1/2 cup EVOO
1/2 cup rice wine vinegar
1/4 cup Tamari
1/8 cup honey
1 clove garlic
1tsp ground ginger

❕Lemon-basil infused chickpeas 🍋

❕Fluffy brown rice 🍚

Creamy tomato dressing:
2 cloves garlic
1 small shallot
1 tsp sea salt
1 tsp ground black pepper
¼ C lemon juice (about 2 lemons)
1 can diced tomatoes
1½ t dijon mustard
¼ t maple syrup
3 T water
¼ C olive oil
