🍠 Roast sweet potato wedges after coating them in EVOO & Cajun seasoning
🍔Prepare your veggie patty: mash 1 can of chickpeas with ½ cup whole oats, ¼ cup diced red bell pepper, ¼ cup chopped green onion, ¼ cup shredded carrot, 1 Tbsp nutritional yeast flakes, 1 tsp salt, 1 tsp garlic powder, 1 tsp paprika, 1 tsp dried parsley, 2 Tbsp olive oil and 3 Tbsp water. Let stand for 20 minutes, form Patties, and then bake on cookie sheet (lined with parchment paper) for 40 minutes at 375.
🌽 Boil ears of corn and cut kernels off
🥒 🌶 Dice cucumbers and red peppers
🥬 Layer on top of baby spinach.
Deli-style dressing:
1/4 cup Red Wine Vinegar
1/4 cup Honey
1/4 cup EV Olive Oil
1 tablespoon Dijon Mustard
1 teaspoon salt
1/3 teaspoon pepper
