Baked Cod with Olive & Tomato Tapenade

Flaky cod baked with a Mediterranean olive-tomato topping.

Serving Size: 1 fillet portion
Calories: 360
Protein: 38g
Carbs: 12g
Fats: 18g

Ingredients:

1 cod fillet (150g)

¼ cup cherry tomatoes, halved

2 tbsp kalamata olives, chopped

1 tsp capers

1 tsp olive oil

½ tsp oregano

Instructions:

Preheat oven to 375°F (190°C). Place cod on baking tray.

Mix tomatoes, olives, capers, oregano, and olive oil.

Spoon mixture over cod and bake 15–18 minutes.
