Summer Berry Protein Parfait

As the Texas heat rolls in, itโ€™s time for something cool, refreshing, and packed with nutrition! This monthโ€™s pick is a Summer Berry Protein Parfaitโ€”an easy, no-cook, layered treat that tastes like dessert but fuels your body like a meal.

Why We Love It:

Quick & Easy to make (no stove required)

High in protein and antioxidants

Perfect for breakfast, post-workout, or an afternoon snack

Ingredients (1 serving):

ยพ cup nonfat Greek yogurt (plain or vanilla)

ยฝ scoop vanilla protein powder (optional but adds extra protein)

ยผ cup fresh strawberries, sliced

ยผ cup fresh blueberries

2 tablespoons granola or oats

1 teaspoon honey (optional)

Directions:

Mix Greek yogurt and protein powder until smooth.

In a cup or bowl, layer half the yogurt mixture, then half the fruit.

Repeat the layers. Top with granola and a drizzle of honey.

Chill or serve immediately!

Fresh, simple, and packed with protein and healthy fats โ€” these Chicken & Avocado Lettuce Wraps are perfect for a quick lunch or light dinner. Theyโ€™re low-carb, super satisfying, and ready in 15 minutes or less!

Ingredients (serves 2-3):
1โ€“2 cooked chicken breasts, shredded or chopped

1 ripe avocado, diced

Juice of 1 lime

1โ€“2 tablespoons plain Greek yogurt (optional for creaminess)

Salt & pepper to taste

Romaine or butter lettuce leaves (for wrapping)

Optional toppings: diced tomatoes, shredded carrots, sliced jalapeรฑos, or hot sauce

Instructions:
In a bowl, mix chopped chicken, avocado, lime juice, yogurt, salt, and pepper until combined.
