Below these delicious greens were some DELICIOUS mashed potatoes. This whole meal was 682 calories! Took roughly 30 minutes to go from raw ingredients to the dinner table.

This wfpb meal was 627 calories! Made the vegan mac&chz with elbow noodles, nutritional yeast, broth, and almond milk. The veggie bowl is made with carrots, potatoes, lettuce, and cherry tomatoes. So much volume, but such few calories! It was super filling.

Colorful carrots are one of my favorite veggies! You can usually find them at the grocery store this time of year, cook them like any other carrot, and add some color to your plate. I sautΓ©ed these in water to avoid the oil. I’m not exaggerating when I say how easy and good these are in a dinner bowl.

Hiked the 2.4 miles at this weekend! I struggled to catch my breath several times, but reaching the lake was totally worth it. Brought a fruit cup with me made of mangos, strawberries, blackberries, raspberries, and blueberries to fuel me for the hike down. It gave me a great energy boost to say the least! Any hikes you recommend?

Another day, another  burger! I’ve struggled to make time for cooking this week, but I’m hoping to meal prep this weeken...

Another day, another burger! I’ve struggled to make time for cooking this week, but I’m hoping to meal prep this weekend. Committing to a 4 month fitness challenge and at least I skipped the fries this time around. Small changes will add up!
