Crock Pot Turkey Chili - It's that time of year!!
Ingredients:
1/2lb Ground Lean Turkey
1 Green Pepper
2 Jalapenos
1 medium to small yellow or white Onion
1 can Garbanzo Beans
1 can Black Beans
1 can Diced Tomatoes
1 can Diced Green Chilles
1/4 cup Chili Powder
Dashes of Salt and Pepper
Dashes of Oregano
Dashes of Garlic Powder (you can cut up reg. garlic too if wanted)
(all these dashes I eyeball.. garlic powder I add the most dashes)
Water (optional-add to crock pot if it’s looking dry during cooking)
Shredded Cheddar (optional)
Spoon Greek Yogurt plain (optional-as a sub for sour cream)
Directions:
1. Chop Green Pepper and Jalapenos and add to crock pot. I cut open the jalapenos and scoop out the seeds before cutting.
2. Chop the Onion and add to crock pot
3. Open the cans of Black Beans and Garbanzo beans and rinse in a strainer. Then add to the crock pot.
4. Open the diced tomatoes and green chilles cans and add those to the crock pot.
Note-You can also opt to use regular tomatoes if you don't want to use canned!
5. Now time for your spices-Add 1/4 cup of chilli powder and for the rest of the spices it's all about your personal taste. I do a few shakes of the garlic powder, then some dash of oregano and salt and pepper. You can always add more so go easy and see how you like it as it cooks. I would check it after an hour or so and season to taste. This time around I had to add a little water as it was getting dry. So just FYI!
6. Now it's time to cook your lean turkey. I cook it through and add to the pot. Now set your crockpot to HIGH for 3-4 hours and you are good to go!
Here is the 21 day fix breakdown (NOT including any toppings) for 1.5-2 cups: 1 Red (turkey), 1 Green (tomatoes, peppers, onion, jalapenos), 1 Yellow (beans).
