Get that fiber in!

"Marry me" chicken and chickpeas: Try our take on the viral "Marry me" chicken with a high fiber and protein twist! Makes about 3 servings at ~300Cal 28gPro 13gCarb 16gFat 5gFiber per serving.
Ingredients:
1 cup chickpeas drained and rinsed
1 large chicken breast
1 tbsp tomato paste
1 tbsp sundried tomatoes
1 cup spinach (rinsed)
0.5 cup milk of choice (I used Fairlife 2%)
0.5 cup no sodium added chicken or bone broth
1 tbsp olive oil
1/3 cup shredded parmesan cheese
1/3 cup part-skim shredded mozzarella cheese
1 tsp black pepper
1 tsp white pepper
1 tsp minced garlic
1 tsp onion powder
1 tsp salt of choice
2 tsp paprika
2 tsp fresh chopped basil
1 tsp oregano
Instructions:
Heat a large pan at medium-high with your oil and mix it with all of the spices (no herbs yet). Heat and stir this mixture for 2-3 minutes then thoroughly cook your chicken in it. Take your chicken out to cool then add your tomatoes (paste and sundried) and chicken broth. Let cook and stir for 3-5 minutes. Now, add in your chickpeas, spinach, and cook for 5-7 minutes while you shred or dice your chicken. Add your chicken back in along with your milk, cheeses, and herbs. Cook and stir together for another 3-5 minutes and then enjoy! Goes great with low carb tortilla shells or some whole wheat bread slices for dipping.
