I’ve had quite a few questions about store-bought chicken broth, and my answer is always the same: read the label. From weight gain, (I usually see .6-1.2 )to migraines this “hidden” ingredient can cause major drama
It’s pretty easy these days to find broths without added MSG (which can contribute to weight gain, migraines, and other reactions in susceptible people). What’s much harder is finding one without yeast extract or autolyzed yeast—ingredients that can also create free glutamates and trigger similar reactions for some people.
Here’s the short version…
Yeast is a living organism. When manufacturers break it apart, enzymes release amino acids—including glutamates. Whether it’s called yeast extract, autolyzed yeast, or hydrolyzed yeast, the end result can be the same for sensitive individuals.
🚩 Ingredients I avoid in broth:
* MSG (monosodium glutamate)
* Glutamic acid / glutamate
* Monopotassium glutamate
* Calcium, magnesium, or monoammonium glutamate
* Anything “hydrolyzed”
* Hydrolyzed protein
* Yeast extract
* Autolyzed yeast
* Torula yeast
* Yeast nutrient or yeast food
* Soy protein (concentrate or isolate)
* Whey protein (concentrate or isolate)
* Soy sauce or soy sauce extract
* Gelatin
* Textured protein
🤔 Ingredients that also make me suspicious:
* Enzyme-modified ingredients
* “Contains enzymes”
* Fermented ingredients
* Vetsin
* Ajinomoto
* “Natural seasonings” or simply “seasonings” and “spices” (sometimes, but not always)
