Skinny Chicken Queso Recipe
For all my awesome clients this is one of our most loved recipes and for all my friends I know you'll love it 2 !
Traditional Mexican dips can cost you a few hundred calories for a small serving, and that's not even including the dippers. This is a lighter version of a classic fiesta favorite - queso! Better yet, serve it with celery and mini sweet pepper halves instead of chips to cut even more calories and add a hefty dose of vitamin C! Any vegetable pairs great with this dip, so feel free to sub in whatever veggies you have on hand!
Each serving yields one complete lean & green meal:
Ingredients:
12 oz. shredded, cooked chicken breast
1½ cups reduced-fat, shredded sharp cheddar cheese ¾ cup low-fat, plain Greek Yogurt 4 tbsp reduced-fat cream cheese, softened
1 cup diced tomatoes with green chilies
½ cup chopped cilantro (optional)
1, 1-Ib. bag mini sweet peppers, halved lengthwise, stems and seeds removed
2½ cups celery sticks (about 13 oz.)
Directions:
1. Preheat oven to 350°F.
2. Combine all ingredients except the cilantro and bell peppers in a bowl, and pour into a lightly greased casserole dish.
3. Bake for 20 minutes until heated through. Serve hot with halved mini sweet peppers and celery sticks.
