“Growing up, my mom commonly made pancakes on the weekend. I loved them! 😋 I still really like them, but between the flour and the syrup, I’ll be in a carb coma nowadays. 🥴 So these high protein and fiber pancakes have been a game changer!
No, they’re not light and fluffy. I would call the center a bit gelatinous. They don’t bubble through when you’re cooking them like traditional pancakes, so you l’ve got to keep an eye on them. On medium heat, each side might take ~8 minutes. The batter is thick because of the psyllium husk, so don’t continually add water to thin the batter. Spread out the batter once it’s in the pan. For me, the blueberries definitely make them tastier. Here’s the recipe for 3 pancakes the size of what’s pictured 🥞:
- 2 scoops of organic vanilla protein powder (we sell at the gym two of my favs)
- 2 organic eggs
- 2 Tablespoons psyllium husk powder
- Enough water to quickly whisk into semi-thick 🤷♂️ batter
