Healthy Meal Idea: Chicken & Sweet Potato Bowls

Ingredients (serves 4):
2 cups cooked shredded chicken (rotisserie works great)
2 medium sweet potatoes, diced
1 tbsp olive oil
1 cup corn
1 avocado, sliced
½ cup shredded cheese (optional)
1 cup cooked brown rice or quinoa

Instructions:
Roast diced sweet potatoes at 400°F for 20–25 minutes with olive oil and salt.
Warm shredded chicken in a pan
Build bowls with rice, sweet potatoes, chicken, corn, avocado, and cheese.

Protein: ~35–40g per serving
