At the beginning of the month I had an oops. Had a fall and fractured my elbow 🫣 it’s been a few weeks now of healing and I’m still recovering but I’m feeling lucky it wasn’t worse. This book haul I’ve accumulated over the past couple of weeks. Some from amazon, goodwill and a couple of trips to our romance bookstore I’m grateful I can still write and do the things I love.

was such an amazing experience. My first book convention ever and I’m so happy it was this one I chose to go to. I met some other readers who are incredible people, made some new friends. Met authors who I’ve loved reading their books and found some new to me ones too. It’s now under my skin and I know I’m not alone that I want to do this again. As far as experiences go this ranks up there pretty high for me. I have never traveled anywhere but the west coast, Hawaii, Arizona and Vegas until this trip. It was great to get to spread my wings so to speak. I hope to do more eventually.

Went on a bit of a baking spree. Made oatmeal raisin cookies yesterday. Today I made vanilla donuts glazed and with sprinkles (Scarlett’s choice) she helped too and then I made maple cinnamon oatmeal cookies. My house smells so good right now. It’s heavenly 😊

It has been quite a while since I have shared anything and I have just been very busy focusing on my health, and family. I thought it was a good time to share some of the food combinations I have been trying out recently since they have been really good. I’m very addicted to Good Culture Lactose Free cottage cheese. It’s creamy, full of protein and tastes amazing. So I have been using it in a lot of my lunches and dinners lately. Pictured are a cottage cheese pizza bowl with canadian bacon and spinach in it with Rao’s pizza sauce. I use just enough of the sauce that it doesn’t trigger my Gerd which works out great so I can still enjoy the dish. Also in the other bowl is a bbq chicken cottage cheese bowl. It would have been great with baby potatoes in it but I had none on hand do it just had diced chicken breast but it was still great. On the plate is a brown rice lightly salted rice cake with cottage cheese and tuna with veganaise and a tiny bit of dill relish mixed in again not to trigger my Gerd but still get the pickle taste in there. It was great. The cheese balls are a brand called Outstanding cheez balls and are gluten and vegan. They are packed with veggies too which is what also made me want to try them. They were delicious plus with nutritional yeast in them too packed with vitamins.

Apple pie mini pancakes. Made in the dash mini griddle. 1 egg beaten, 2 tbsp almond flour, 1/2 tsp baking powder, 1 tbsp swerve powdered sweetener, 1 tbsp heavy whipping cream, 1/2 tsp cinnamon, 1/4 tsp apple pie spice. Topped with 100% pure maple syrup. I know its not low carb syrup its what was open though and I dislike opening something if there’s something similar already open. Also had some mini toast with vegan whipped butter while these were cooking.

Today this is my mindset. I share a lot of what I eat and what not. Any negativity like I got on another platform just makes this even more relevant. No one knows your body, ailments, what your body needs better than you. Unless it’s your doctor telling you, you need to change something anything anyone else says can be in one ear and out the other. YOU decide what your life looks like. YOU decide what goals to make and achieve. Some stranger or even family member or friend get to dictate how your journey goes. Be proud of the things you do and who you are. You are amazing just how you are. If you have goals go get em! If you want to change then do it for you and no one else. I am fired up about this since I hear negative talk about my body and the things I do. News flash!!!!! I don’t care what anyone thinks! It’s my body and I’m doing what’s best for me and what makes me happy. Keep doing what you love and let no one dull that sparkle!

Here is an easy way to use ripe bananas. In a bowl mash 2 bananas, mix in 1c oats until completely combined. Mix in toppings of choice for example 1/4c peanut butter, chocolate chips, raisins, walnuts or almonds. I made a batch with raisins and a batch with dairy free milk chocolate chips. Once everything is mixed bake for 12 minutes or until golden brown at 350.

I am so excited to be a part of this new program. To learn everything from the creator himself! What an awesome opportunity especially since I’m going to be starting the program July 16th for the early access. The free preview for this program is still available to try and you don’t have to have Beachbody on Demand to try it. I’m pretty sure once you do though you’ll want to get BOD and join in on the fun.

We all have our reasons we don’t workout. A lot of them though are excuses. I’ve made plenty over the years, but I’m not going to let them define my journey. I’m going to take the days off I have and jump back in 110% because I have goals to smash and a vision of where these goals/dreams will take me. Only hard work, consistency and drive will get me there. If you have been hiding behind your excuses and want to really commit then let’s go and get your journey or adventure going!
