Fun recipe we tried out with the left over trimmings from a competition pork butt.
๐ฅ Beer B Que Boys Carnitas (Crockpot Method)
Taco-truck style carnitas with crispy edges.
Simple ingredients, big flavor, and a trick at the end that makes them taste like they came straight from a street taco stand.
Ingredients
โข 1โ2 lbs pork shoulder or pork butt, cubed
โข AP rub (salt, pepper, garlic)
โข Chipotle chili powder
โข Cumin
โข 1 whole onion, chopped
โข Juice of 1 orange
โข Juice of 1 lime
โข ยฝ cup water
โข 1โ2 tbsp cooking oil
โข 2 bay leaves
โข Optional: ยฝ tsp Mexican oregano
For Serving
โข Flour tortillas
โข Diced white onion
โข Fresh cilantro
โข Crumbled cotija or queso fresco
Instructions
1. Season pork cubes with AP rub, chipotle chili powder, and cumin.
2. Heat oil in a skillet and brown the pork to build flavor.
3. Remove pork and cook chopped onion in the same pan to pick up the browned bits.
4. Add orange juice, lime juice, and water to deglaze the pan.
5. Place pork in the crockpot and add the bay leaves and optional Mexican oregano.
6. Pour the deglazed onion and citrus mixture over the pork.
7. Place the squeezed orange halves on top.
8. Cook on LOW for about 6 hours.
9. Remove pork and shred with two forks.
10. Spread on a sheet pan, drizzle with some cooking liquid, and broil until edges get crispy.
๐ฅ Mike Davis Tip
Broiling the shredded pork with a little cooking liquid gives you crispy taco-truck style edges while keeping the meat juicy.

Simple. Authentic. Perfect.
