I had a craving today, so headed straight to the kitchen! Here’s our snack we came up with in no time at all! 💜
Spinach Rotel Dip
Makes about 11 (1/3 cup) servings.
4 points per serving
1 pound ground chicken breast or 98% fat free ground turkey
14 ounces Velveeta queso blanco, cubed (I used the one with jalapeños… if you don’t like spicy… use plain Velveeta) (46)
2 ounces fresh spinach, chopped (I would use more but I didn’t have it)
1 can Rotel tomatoes (if you don’t like spicy, use petite diced tomatoes)
1/4 teaspoon garlic powder
1/4 teaspoon minced onion flakes
1/4 teaspoon smoked paprika
1/4 teaspoon salt
1/4 teaspoon beef bouillon powder
1/8 teaspoon ground black pepper
1/2 cup nonfat plain Greek yogurt
Brown meat in skillet. Once cooked through, drain grease. Add all remaining ingredients, except yogurt. Cook on medium low heat until cheese is melted. Add yogurt and stir to combine.
Serving suggestion:
Serve with your favorite low carb tortilla, air fried, for a nice low point snack!
