Great lunch idea for today! AIP, Paleo, dairy free and gluten free! I'm obsessed with butter lettuce, this salad has tuna, water chestnuts, Tasso ham and some Chimichurri sauce, avocado oil and lemon! So easy and healthy! Happy hump day!!!

I forgot how much I love these. My friend Kirsten Nau turned me on to rostered beets. My kids love to snack on these, roasted them on a low temp for a few hours, added some olive oil and sea salt!
