Breaking a 20hr fast in a real life restaurant. I missed this local Croatian owed cafe a lot. A good size first of two daily meals. Hollandaise sauce, or I call it “Keto pudding”. A definite favorite. Finished the meal with a salad with their great house made dressing; perfect.

A favorite and a consistent repeat in my limited repertoire of cooking, Italian sausage always your favorite, sautéed zucchini and mushrooms (I don’t miss pasta) and a big salad. I always season my fat before I sauté my vegetables. Either the way I was raised or my OCD, I always have my salad on a separate chilled plate. A quart of diluted iced tea with 100g of vitamin C as ascorbic acid. Served in an old school Club Rehab quart container from the Hard Rock Hotel in Las Vegas I got during a deadmau5 concert. I had four or five $35 absolute vodka sodas that day. LOL! I drink a gallon to a gallon a half of fluid every day; water, coffee, tea and sparkling Peligrino.

Breaking my 19 hour fast with leftover chicken thighs sautéed in bacon fat, topped shredded Parmesan cheese and a half a bag of pre-cut cabbage dressed in olive oil, MCT oil and apple cider vinegar. My interpretation of a Malibu sauce, avocado chipotle mayonnaise Dijon mustard; A ton of flavor, healthy fat and a little kick.

A quick dinner after a Costco and Whole Foods run. Amazing cast iron skillet cooked New York steak, $6.98 a pound; delicious. sandwich thins broiled with pizza blend cheese and Italian seasoning. Spinach wilted in coconut oil seasoned Smokey Monterey seasoning, very flavorful and great to get flavor with out animal fat. I cook very simply, but with flavor and easy cleanup.

I have been fight low iron for over a year.; not fun The weird thing is I’m not anemic at all. Supplementing can only go so far. Tonight, grass fed grass finished 80/20 ground beef, mushrooms cooked in gear and baby spinach wilted in the hamburger and added beef tallow grease. Using an old school cast iron skillet to see if that helps. Spinach just magically disappears when you cook it...

I’m still doing an 18/6 intermittent fasting schedule. I took this reading on my Keto Mojo after a large cup of coffee sweetened with a chocolate flavored liquid Stevia. I put it in water once for S&G’s, it strangely tasted like a chocolate Tootsie Pop.

A simple low carb Saturday dinner of “Steak & Fries??. One of my favorites, New York Steak (Finished with grass fed butter), Celerac Roots Fries and a good size green salad with avocado.

For the fries:
Peel and cut the Celerac Root into a good fry shape (They do shrink) and toss in some coconut oil. Bake at 425 F for 40 minutes and toss and flip every 10 to 15 minutes. Spice as desired; I use Celtic Sea Salt, ground pepper and a little of my new favorite Mexican seasoning. Chipotle avocado mayonnaise, for dipping, from Primal Kitchen is a must. I was never a mayonnaise fan, but trying this brand changed that. I could eat it like yogurt in a bind.

I never had much of a sweet tooth, but a “Keto Friendly” brittle idea came to mind for some reason. This is still a work in progress, I have to breakdown the macros for a repeatable recipe. So far does taste pretty amazing. Basically cook in one pan on the stovetop then spread on a parchment lined cookie sheet to cool.

Here is a list of the ingredients; no measurements. I definitely just threw this together:

Brazil Nuts
Macadamia Nuts
Pecans
(You can use any nuts you like, I found these are the most keto friendly)
Ghee
Grass Fed Butter
Monk Fruit (Granulated)
Celtic Sea Salt
Cayanne Pepper (Flavor Enhancer)
