Came home to this plant-forward meal last night — my daughter Christina Glynn made dinner on a busy weeknight, and it was incredible 🥙
That’s me in the first photo, looking pretty grateful for a home-cooked meal I didn’t have to make 😊
She told ChatGPT what we had in the fridge, and it built her this Mediterranean bowl: falafel, chickpeas, quinoa, roasted zucchini and peppers, arugula, tzatziki, pita.
Swipe for how she laid it all out before building the bowl 👉
If you’ve got random ingredients and no plan, that’s a genuinely great way to turn them into something real.
But here’s what got me the most: watching her cook a healthy, plant-forward meal without even thinking twice about it. She grew up watching me do this in our kitchen, and now it’s just… how she cooks.
That’s the whole point of role modeling — it’s not about lecturing anyone into eating better, it’s about making it normal to see.
So grateful for a daughter who cooks like this, and for the reminder that what we do in front of our kids matters more than what we say.
Want to stock your own kitchen so you can throw something like this together? My free Kitchen Guide is linked in my bio — it’s exactly the kind of staples that made a meal like this possible with almost no planning.
And if you’re curious which of these veggies I buy organic vs. conventional, I broke it down in my last reel 👆
No diets. No deprivation. Just real food and a life you love.
