Feeling a little homesick lately.

I could really go for a dose of vitamin C…
warm runs by the ocean,
a stop at my favorite smoothie shop,
sun on my face, happy people everywhere.

Straight into a Sunday Funday happy hour cocktail 🍹

I swear every year that passes, Florida looks better and better.

The real question is… when do I actually make the move?

🍓 Easy Chocolate Drizzled Strawberries

Ingredients
• 1 package organic strawberries, washed, dried & cut
• 1 bar HU Salty Dark Chocolate (for the adults 😉)
• Enjoy Life, Lily’s, or any chocolate chips your kids love
• 1 teaspoon coconut oil



Instructions

1️⃣ Wash, dry, and slice strawberries.
(Make sure they’re fully dry so chocolate sticks.)

2️⃣ Add chocolate + coconut oil to a bowl.

3️⃣ Melt in microwave in 20–30 second intervals, stirring until smooth.

4️⃣ Drizzle melted chocolate over strawberries.

5️⃣ Let sit for a few minutes or pop in the fridge to set.

Eat. Enjoy. Make it fun. 💕

🍔 Bunless Burger + Rustic Fries

Ingredients

Burger
• Grass-fed burger patty
• Lettuce
• Tomato
• Pickles
• Cheddar cheese
• 1 fried egg

Rustic Fries
• 2 rustic potatoes, sliced into fries
• Salt
• Pepper
• Italian seasoning
• Smoked paprika
• Garlic powder
• Red pepper flakes
• Olive oil (light drizzle)



Instructions

1️⃣ Preheat oven to 425° convection.

2️⃣ Slice potatoes into fry shapes. Toss with olive oil and all seasonings until evenly coated.

3️⃣ Spread on a baking sheet in a single layer.

4️⃣ Roast for 25–30 minutes, flipping halfway, until golden brown and crispy.

5️⃣ Cook grass-fed burger to desired doneness.
Top with cheddar at the end to melt.

6️⃣ Fry egg to your liking.

7️⃣ Stack it up: lettuce, tomato, pickles, burger, cheese, fried egg.

Serve with the fries + enjoy.

POV: You’re feeding your family but still want it to slap.

🍅 Creamy Tomato Protein Pasta

Save this. Tag me when you make it.

Ingredients
• 1 lb protein pasta (or regular — gluten-free works too)
• 12–24 oz flavor bomb tomatoes (depending on how saucy you like it)
• 2–3 cloves garlic, chopped or sliced
• 1–2 tbsp olive oil
• Salt + pepper to taste
• Italian seasoning
• Fresh or dried basil
• Red pepper flakes (optional heat)
• 1 package Boursin (Shallot & Chive) or fresh mozzarella or grated parmesan
• Reserved pasta water

Optional for serving:
• Crispy chicken cutlets
• Steak
• Shrimp
• Or keep it simple



Instructions

1️⃣ Boil pasta in salted water according to package directions.
Save ½–1 cup of pasta water before draining.

2️⃣ While pasta cooks, heat olive oil in a pan over medium heat.

3️⃣ Add garlic and sauté until fragrant (about 30 seconds).

4️⃣ Add tomatoes. Cook until soft and blistered.
Use a fork to smash them down into a chunky sauce.
Season with salt, pepper, Italian seasoning, basil, and red pepper flakes.

5️⃣ Let tomatoes cook down until jammy and saucy.

6️⃣ Lower heat and stir in cheese of choice:
• Last week = mozzarella
• This week = Boursin (SO creamy)
• Parmesan also works

7️⃣ Add a splash of reserved pasta water to thin sauce to your liking.

8️⃣ Toss in drained pasta. Stir until coated and glossy.

Serve with crispy chicken cutlet (like pictured), steak, or any protein.

Throughout all the chaos happening in my life I am
still feeding my crew real food. 💀🖤

Dinner ➡️ Breakfast meal prep in one pan.
Because we don’t have time for complicated.

🍞 French Toast Bake (Using Leftover Rolls or any bread about to go stale)

Ingredients
• Leftover dinner rolls (about 8–10 rolls), cubed
• 6 organic eggs
• 1 cup unsweetened almond milk
(or whole milk or buttermilk)
• 2 tbsp pure maple syrup
• 2 tbsp organic white sugar (optional)
• 1½–2 tsp organic cinnamon
• 1 Tbs vanilla extract
• Pinch sea salt
• Butter or coconut oil for greasing pan



Instructions
1. Preheat oven to 350°F
(Convection: 325°F)
2. Grease your pan
Use butter or coconut oil. A disposable foil pan works great.
3. Prepare the bread
Cut dinner rolls into chunks and spread evenly in pan. Slightly stale bread works best.
4. Mix wet ingredients
In a large bowl whisk together:
• 6 eggs
• 1 cup almond milk
• Maple syrup
• Sugar (if using)
• Cinnamon
• Vanilla
• Pinch salt
Whisk until fully combined and slightly frothy.
5. Pour & soak
Pour mixture evenly over bread.
Gently press bread down so all pieces absorb the custard.
👉 If you have time, let it sit 15–30 minutes for extra softness inside.
6. Bake
• Regular oven: 35–45 minutes
• Convection: 30–40 minutes
It’s done when:
• Center is set (not wet or jiggly)
• Top is golden brown
• Internal temp hits about 165°F
If top browns too fast, loosely cover with foil.



Optional Maple Glaze

Mix:
• 2 tbsp powdered sugar
• 1–2 tsp almond milk
• Tiny drizzle maple syrup

Whisk and drizzle over warm bake.

Miss you all. We’re in the waiting game getting into the house, but it’s coming along. Once I’m moved in and settled, BFK will be up and running 👏🏻

Extra thankful this year.
Last Thanksgiving looked very different — grief, loss, and unexpected health scares. It felt heavy.
But one year later… our smiles are back.
Last year we mourned a life, and this year we get to celebrate a new one.
Crazy how life can break you and rebuild you at the same time.
Feeling nothing but gratitude for where we are now. 🤍

The Lambert gal in me LOVES making a good ol’ sandwich or wrap with fresh ingredients 🤤🥪

Now that I’m on my first pumping journey, food = fuel more than ever. Between a newborn and two crazy kids, having a meal that checks all the boxes…
✔️ Protein
✔️ Fats
✔️ Carbs
✔️ Fiber
…is a MAJOR win for me. Anddd if you know me, you know I love when my meals are homemade 🙌🏻

So let’s get to it — here’s the quick + easy wrap I’ve been obsessed with lately ⬇️

Ingredients:
• 4 crispy chicken breasts (homemade, Applegate, Bare, Real Good — mine were homemade, check my stories for the recipe!)
• Lettuce of choice — I used romaine
• 3 tomatoes, chopped
• 1 bell pepper, sliced
• 2 carrots, shredded
• BFK homemade honey mustard (sorry 🤭 can’t share that recipe!)
— Or use your fave: I love Side Dish or Primal Kitchen for better-for-you ingredients
• Your favorite wrap — protein wrap, gluten-free, whatever you love

Assemble:
Layer everything in your wrap, drizzle with honey mustard, roll it tight, slice, and enjoy 🤌🏻

I paired mine with roasted sweet potatoes for the perfect sweet + savory combo. SO good!

And the best part? This dinner is so versatile — you can make any type of wrap with different ingredients. Caesar, teriyaki, buffalo, barbecue… have fun with it and make dinner your own 🌯✨

🇺🇸 Veterans Day 🇺🇸

Today I want to take a moment to thank my husband — not only for serving this country, but for coming home and starting this beautiful life and family with me. We were just kids who somehow made it through 3 1/2 years of service — one of those years spent apart while he was in Iraq — and through it all, we came out stronger. ❤️

I’ll never stop being proud of the man you are and the sacrifices you made.

And to all the brave men and women who have served — you are the bravest of the brave. Thank you for protecting this beautiful country we get to call home. 🤍💙

Dear 53,

Six years with you — and what a crazy six years it’s been.

When we found you, we were lost. Corey and I had hunted for houses for over a year, got outbid more than 50 times, and walked through hundreds of houses in so many towns. We were exhausted, defeated… and I was pregnant (the irony 😅). We saved everything we could while raising our oldest, just hoping for a place to call home.

Then we stumbled on you. We could afford you. We could build you. And just like that, you became our first real home together. Corey and I had never lived together before — this was our first true journey as a family. My oldest was two, I was pregnant with our second, and the chaos was just beginning.

You were where we started our family. You gave us countless firsts (and some lasts). You were filled with laughter, love, and endless kid chaos. You hosted the parties, the backyard playdates, the friends who came and went, and the family who never stopped showing up. You were an open-door house — always welcoming, always full of snacks, always full of love.

53, you also gave me the chance to open my business — right in this very kitchen 💀. This is where I created new foods, treats, and connections that became the heart of Be Fit Kitchen. The place where ideas turned into recipes, and recipes turned into something bigger than I ever imagined.

We celebrated new babies, mourned losses, and cheered through every little and big change under your roof. You gave us what we needed, exactly when we needed it. And for that, I’ll always be grateful.

But our time here is up. What once felt like everything we wanted — the neighborhood, the people, the noise — turned into something we realized wasn’t truly us. We crave space, privacy, and a place where our boys can run free in the woods. A place closer to family.

So, thank you, 53. Thank you for creating our family, for being the safe place we needed, for being the house that built my business, and for being the house that taught us what home really means. You’ll never be forgotten as we move into this next chapter — as a family of five 💛

How I’m getting my dates in this week 😋✨
Meet my makeshift Coconut Caramel Delights—bite-sized, gluten-free, dairy-free, refined-sugar-free, and grain-free!
Chewy, sweet, drizzled in dark chocolate…basically a better-for-you samoas vibe.

🍪 What’s inside:
→ Medjool dates (sticky caramel base)
→ Unsweetened shredded coconut
→ Almond butter
→ Maple syrup
→ Vanilla extract
→ Melted dairy-free chocolate drizzle

🤎 Simply blend the dates, coconut, almond butter, and vanilla until it sticks together, shape into little rings (or balls), chill, then drizzle with melted chocolate.
Pop them in the fridge or freezer to set—DONE.

🥥 Coconut Caramel Delights

Gluten-Free | Dairy-Free | Refined-Sugar-Free | Grain-Free

Ingredients (makes 10–12 small cookies)
• 1 cup pitted Medjool dates (about 10–12 large dates) – soft & sticky
• ¾ cup unsweetened shredded coconut
• 3 Tbsp unsweetened creamy almond butter
• 2 Tbsp pure maple syrup
• 1 tsp pure vanilla extract
• ⅛ tsp fine sea salt (optional but enhances caramel flavor)
• ½ cup dairy-free dark chocolate chips (melted for drizzle/dip)



Instructions
1. Soften dates: If they’re firm, soak them in warm water for 5 min, then drain well.
2. Blend base: In a food processor, pulse dates, coconut, almond butter, maple syrup, vanilla, and salt until a sticky dough forms.
3. Shape: Scoop about 1 Tbsp per cookie; roll into balls, flatten slightly, and use a straw or piping tip to poke a hole in the center for the “cookie” shape.
4. Chill: Place on a parchment-lined tray and refrigerate for 20 minutes to firm up.
5. Chocolate drizzle: Melt chocolate chips until smooth. Drizzle or dip cookies as desired.
6. Set: Return tray to fridge or freezer for 10–15 minutes until chocolate hardens.

Storage:
Keep in an airtight container in the fridge up to 7 days or freezer up to 1 month.
