My sister and I looooove recipes. She posted her version of the Garlic and Herb Roasted Cherry Tomato Carbonara with Crispy Prosciutto and Burrata, and and I drooled. 🤤

I would scarf down alllll her recipes, no problem, but I have food allergies in my home and I also like to eat a certain way for my current goals I have. Soooo, Challenge accepted to use her recipe as inspiration and create my own. 🥰

Vegan Cheese:
1.5 cups cashews soaked in water for 4 hours, blended in food processor with 1/4 nutritional yeast, 1/2 cup vegetable stock, 1tsp minced garlic, salt n pepper. Blend until smooth. Set aside.

Ingredients: 2 pints cherry tomatoes• 1 cup sliced mushrooms• 2 tbsp avocado oil• 1/2 cup fresh cut basil•1 tsp oregano•3 sprigs fresh dill•1 tsp minced garlic•salt and pepper•8 ounces extra lean ham•2 eggs•1/2 cup egg whites•1tsp red pepper flakes•1 box GF spaghetti noodles•

Preheat oven to 400.
________
Throw cherry tomatoes, mushrooms, basil, oregano, dill in a large baking dish. Toss w/ avocado oil, minced garlic and salt n pepper. Add ham. Bake at 400 until tomatoes are cooked.

Start boiling the GF noodles in a pot of water.
________
While that’s boiling, In a separate mixing bowl, beat eggs and egg whites. Add 1/2 cup of vegan cheese, red pepper flakes, and a pinch of salt and pepper to egg mixture. When noodles are cooked and drained, add the noodles to egg mixture bowl and toss until well coated and thickened to your liking.

Top noodles with tomato, mushroom and ham mixture. Garnish with some fresh basil and a dollop of vegan cheese. Eat and make funny noise when you do.

I remember the exact moment as a kid when I noticed that people respond more brightly when you’re a doer, versus a person just being. That mindset trained me to feel happy and worthiness only when I was a doer.

This habit has served me well in a lot of areas in my life, but I wasn’t living with the muchness I crave most.

So here I share with you a small part of my awareness and unlearning for my becoming.
