Happy Taco Tuesday, y'all! 🥳🎉🙌🏻🌮🪅
I'm that odd gal that CRAVES beef liver every now and then, so jalapeño grass-fed beef liver tacos are tonight's special! I seasoned with cayenne, nutritional yeast, chili flakes, and Trader Joe's taco seasoning, and filled my blue corn tortilla, along with organic salsa and Cholula on top. As always, I have my signature side of rice and refried tajin beans.

Ok- coming in with a breakfast style lunch today, lol but why not, right?!😅🙌🏻
I made a sort of shrimp, duck egg, and tomato scramble, seasoned with coconut aminos, ginger, allspice, nutmeg, cayenne, chili flakes, sriracha, and sunshine seasoning. To go with that I airfried some carrot, sweet potato, and zucchini chunks, and there we go!

Yesterday, I made another fresh batch of instant pot grass-fed beef bone broth,
and since today was such a gloomy and rainy Monday, I decided it was the perfect opportunity to make a super nourishing beef udon soup, with crispy
airfried tofu on the side!🤤🍜
For my soup base, I used my homemade bone broth, Trader Joe's mushroom and umami seasoning, cayenne, chili flakes, minced ginger, garlic, gochujang, and coconut aminos. To that, I added peas, mushrooms, and thick gluten free udon noodles! For the crispy tofu, I cut and tossed my tofu with the same seasonings the soup, as well as corn starch to keep things crispy 😋👌🏻🤍

Soup season is in full force, so I made a simple noodle soup with homemade beef bone broth, tajin, allspice, cayenne, chili flakes, and nutritional yeast, carrots, gluten free noodles, and peas! So quick and easy, but very nourishing and comforting☺🥣🤍

I scrambled homegrown duck egg blistered garden fresh tomatoes with unflavored collagen for extra protein💪🏻
I seasoned with my favorites- nutmeg, allspice, coconut aminos, sriracha, chili flakes, cayenne, and sunshine seasoning. And for carbs, I made sweet potatoes and carrots in the airfryer🥰🍁🤍

Back at it again with another instant pot meal, lol🙌🏻😋 I just love how I can make a whole meal ahead of time and just have it ready to serve, come dinner time! Since today was another rainy day (which I honestly kind of love because we REALLY need this rain after all the forest fires!🙏🏻🙌🏻) I decided to make a super cozy and nourishing chicken congee🥰🥣
I used jasmine rice, organic chicken thighs, carrots, peas, mushrooms, and lots of garlic, and some crushed cashews for a fun and healthy crunch! I seasoned with Trader Joe's mushroom and umami seasoning,
cayenne, chili flakes, minced ginger, gochujang, coconut aminos, and lemon juice.

Rainy days call for cozy soups!🙌🏻🤍🎃🍂🍁🥣
As usual, I used my trusty to cook my fresh pumpkin first. After it was completely cooked and soft, I used an immersion blender to blend until smooth and creamy. To that, I added homemade beef bone broth, garlic paste, blended tvp and tofu for protein, sunshine seasoning, nutmeg, allspice, ginger, pumpkin spice, cayenne, chili flakes, nutritional yeast, peas, and carrots.

The rain has finally arrived and I am ready for more cozy and warm meals, so I decided to make use of the fresh tomatoes that are still growing in my garden by making a little sautée with tuna, and an umami seasoning of
lemon juice, coconut aminos, sriracha, chili flakes, cayenne, and sunshine seasoning. For carbs, I airfried sweet potato chunks, and tossed it all together for a super cozy and nourishing bowl of goods🥰🍁🤍

VEGAN and dairy free protein pumpkin spice fettuccine alfredo?! GIMME!!🎃🙌🏻🍝🌱
I wanted a creamy Alfredo style sauce, but without the heavy dairy and extra protein in it, so I used my handy dandy tofu and tvp for the job! I simply blended together organic tofu, tvp, nutritional yeast, cayenne, chili flakes, Italian seasoning, nutmeg, allspice, and last but not least, pumpkin spice! I simmered that, along with peas for even more protein, and threw in my gluten free yellow lentil spaghetti for a plant-based dinner that brings in over 45+g protein per serving!💪🏻🔥
