1 cup brown rice
2-3 cups fresh baby spinach
2 medium tomatoes (diced)
1 medium onion (diced)
3 garlic cloves (minced)
1 cup black or pinto beans (drained and rinsed)
2 cups low-sodium vegetable stock
1 1/2 tsp curry powder
1 tsp avocado or olive oil
1/4 tsp salt and pepper

โ€” Heat oil in a large skillet on medium heat and add garlic and onion. Saute until onion is translucent.
โ€” Add diced tomatoes and cook until softened, ~3-4 minutes.
โ€” Add spinach, beans, and rice and cook for a few minutes. Then, add vegetable stock and bring mixture to a boil.
โ€” Season with curry powder, salt, and pepper.
โ€” Turn heat down to a simmer, cover, and cook for ~18-20 minutes or until rice is tender.
โ€” Once cooked, turn off heat and let cool before serving. Enjoy!

Summer is nearly upon us! Do you need an activity for your kiddo(s) that will get them moving and burn off some of that boundless energy? Try our CrossFit Kids program. Led by a L1 and CrossFit Kids-certified coach, these classes are fun, active, and safe.

Everybody meet Jon. Jon came to us saying he hasn't been able to move the needle, and he wasn't sure true change was possible for him.

Fast forward three months, Jon is now down 4% body fat from paying attention to his starchy carb portions and learning about his emotions around eating. Let's. Freaking. Go.

The most cool part about his story so far is that a large part of his success has come from mindset and emotional shifts around how he views food, his tendency for the "all or nothing" mindset, and more. Nutrition coaching goes beyond the physical food we put in our bodies and dives into parts of clients that they didn't even know had an impact on their goals.
