Need a quick dinner or meal prep that hits the macros and the cravings?
ONE-PAN SWEET POTATO SKILLET 😋🫑🌶!
Ingredients:
- 1/2 tbsp olive oil
- 1 tbsp minced garlic
- 1 red bell pepper
- 1 red onion
- 3 medium sized sweet potatoes
- 1 lb lean ground beef (or turkey)
- 1 taco seasoning packet
- 14.5 oz can diced tomatoes
- 1 cup beef broth or water
- 1/2 cup shredded cheddar cheese
- 1/4 cup diced cilantro leaves & lime wedges for serving
How to make it:
- Dice peppers, onions, and sweet potato
- Heat olive oil in a large skillet, add minced garlic and diced onion & pepper and cook 4-5 minutes until softened
- Add ground beef and cook through, then stir in taco seasoning.
- Remove beef and veggies from the pan and set aside in a bowl.
- Add sweet potato, diced tomatoes, and water to the skillet and bring to a boil. Turn down heat, cover and simmer until sweet potatoes are fork tender and have absorbed most of the liquid.
- Add beef and veggies back in and stir well. Remove from heat, sprinkle with cheese, and cover until cheese melts.
- Top with cilantro and lime and enjoy! 🫶
