ElseWhere -project- a journey that will take us somewhere else, in an elsewhere that we can't wait to discover.

We're not actors. And you'll probably figure that out within the first five seconds of this video. 😂

But we are four people, two couples, with different lives and a feeling that, little by little, became harder and harder to ignore: maybe the way we were living wasn't really the way we wanted to live.

We didn't have all the answers and, to be honest, we still don't. But at some point, we started asking ourselves different questions. About how we wanted to spend our time, our relationship with nature, and what living well really meant to us.

Elsewhere was born partly from those questions. From the desire to try to build something different.

With this new video series, we want to share a little more about who we are, where we come from, and how we got here.

This is the first part of our story. 🌿

Six months ago, we harvested our olives and put them in brine. From that moment on, there wasn't much left to do except wait and let time do its part.

A few days ago, the moment finally came to open the jars, rinse the olives, taste them, and find out if all that waiting had worked.

And yes, it had. 🫒

It's one of the things we love most about transforming what the land gives us. Everything has its own timing, and little by little, we're learning to follow it instead of trying to rush it.

This time, it took six months. And it was definitely worth the wait.

Every person who passes through Elsewhere experiences this place in a different way.

They arrive with their own story, their own expectations, their own knowledge, and often leave with something they didn't expect.

Over the years, we've shared a lot about Elsewhere through our own eyes. With Elsewhere Stories, we want to do something different: let the people who have volunteered here tell you what this place has meant to them.

The first story we're sharing is Maria's. She came here from Spain to spend a few weeks with us and, for a little while, became part of life at Elsewhere.

This is her Elsewhere Story.

Summer at Elsewhere is always a busy season.

Some projects take shape, while others move forward little by little. We build, harvest, transform, take care of what is growing, and make space for what is yet to come.

Some jobs take weeks, while others come back almost every day. There are first harvests, even when they are tiny, new spaces beginning to take shape, and products made from what the land gives us.

And in the middle of all this, there are new people arriving, days spent together, markets, experiments, lots of work, and a few sunsets that still manage to make us stop for a moment.

This was our summer at Elsewhere. And looking back at it all together, it's beautiful to see how far we've come.

Still no call from Netflix.

So, for now, we'll just keep planting trees, rebuilding the soil, living in community... and filming our own low budget trailers. 😄

One of the things we love most about this project is that no two days are ever the same.

Permaculture and agroforestry naturally lead you to wear many different hats. One day you're planting vegetables, the next you're harvesting herbs for tea, making jam, caring for trees, preparing smoke cleansing sticks or joining local festivals.

Our goal has always been the same: to honour as much as possible what the land gives us, while learning how to care for it a little better every season.

But Elsewhere has never been only about plants.

It's also about people.

Some volunteers arrive with years of experience and generously share their knowledge. Others arrive knowing almost nothing about this world, just as we once did.

We love both.

Because none of us started as farmers, builders or herbalists. We learned from others, we studied, we experimented, we made mistakes and we tried again.

Little by little, this place grew.

And so did we.

Every season brings different projects.
Every volunteer brings different skills.
And everyone leaves with something new.

Three and a half years ago this land was almost only sand.

Very little organic matter.
Very little water held in the soil.
Very little life.

So we started from there.
From the basics.

Compost.
Mulch.
Biomass.
Water.
Seeds.
Attempts.
Mistakes.
Observation.

And year after year something started to change.

Not all at once.
Not quickly.
But slowly the soil began to hold moisture.
Insects, fungi, wild plants and pollinators arrived.
The plants started growing differently.
And where there was once almost only sand, today there is a living ecosystem.

We are still at the beginning.
Three and a half years is nothing for an ecosystem.

But watching life return to a piece of land is one of the most beautiful things we have ever had the privilege to witness.

There is something deeply beautiful about handmade processes.

Not because they are perfect. Not because they are fast. But because every single step passes through human hands.

These syrups begin in the garden, collecting herbs and flowers one by one, choosing the plants, cutting them gently, leaving them in water overnight so they can slowly release their scent, flavour and qualities.

Then comes the filtering. The stirring. The simmering. The bottling. The labels placed one at a time.

Nothing here is automated.

Every bottle takes time. Attention. Presence. Repetition.

And somehow, we love that.

Because in a world that pushes everything to become faster, we are still interested in slow gestures.

In making things carefully. In knowing the plants we work with. In touching every bottle before it leaves this place.

And yes, alongside the practical side, there is also intention.

Each plant carries its own qualities, its own character, its own quiet language.

So while these syrups are simply delicious drinks, they are also botanical preparations made with care, with attention, and with deep respect for the herbs growing around us.

Small handmade botanical preparations, coming from our garden, our hands, and a slower way of living.
