Healthy High-Protein Lemon Blueberry Cheesecake Low Calorie

Ingredients
Filling:
180 g light cream cheese
250 g Greek yogurt, preferably 0β2% fat
100 g cottage cheese
2 large eggs
2 tbsp honey
1Β½ tbsp fresh lemon juice
1 tsp vanilla extract
1 tsp lemon zest β optional, but recommended inside the cheesecake
1Β½ tbsp cornflour/cornstarch - optional
Blueberry topping:
100 g blueberries, fresh or frozen
1 tsp honey
1 tsp lemon juice
10β15 g finely chopped or blended pistachios or almonds
Method:
Preheat the oven to 160Β°C fan / 180Β°C conventional.
Blend the cottage cheese until completely smooth.
In a bowl, mix the cream cheese, Greek yogurt and blended cottage cheese until creamy.
Add the honey, lemon juice, vanilla and optional lemon, eggs one at a time, mixing gently. Avoid over-whisking.
Add the cornflour and mix until smooth. -optional
Pour into a lined 6-inch round cake tin.
Bake for about 30β40 minutes. The edges should be set while the centre still has a slight wobble.
Turn the oven off and leave the cheesecake inside for 10 minutes with the door slightly open.
Cool completely, then refrigerate for at least 3 hours, ideally overnight.
Blueberry topping π«
Add the blueberries, honey and lemon juice to a small pan. Cook over medium-low heat for 3β5 minutes, lightly crushing some of the blueberries until you have a thick compote.
Let it cool completely before spreading it over the chilled cheesecake.
Finish with 10β15 g finely chopped pistachios. Iβd choose pistachios over almonds because the green colour looks especially good against the dark blueberry topping. ππ«
