Rogel is a traditional South American cake made of many delicate, hand-rolled biscuit layers, with rich dulce de leche (milk caramel) between each one — and finished with a silky meringue topping. You can enjoy it with the meringue flamed or plain, both equally delicious!

This week I had the pleasure of making one for a Holy Communion celebration… and of course, I couldn’t resist making a tiny one for home too — just so I could show you the beautiful layers inside 😍
