What is Immune Modulation?

The bodies immune system is intelligent and needs to know when to react and when not to react. An over-reaction of the immune system can result in allergies or auto-immunity.

Immune modulating tools such as Vitamin D and beta-glucans from mushrooms strengthen the systems ability to fight when needed, and to down-regulate the immune response when needed. If the system gets stuck or overwhelmed in an inflammatory pattern, then immune modulation can be helpful.

We need immune flexibility, the ability to adapt and change to various immune challenges.

July 7th is World Chocolate Day!

Researchers think cocoa may have health benefits for two reasons. First, it’s rich in flavonols, which are antioxidants believed to protect blood vessels from aging. Second, it contains theobromine, a bitter-tasting stimulant that may reduce inflammation.

Chocolate comes from the seed of the tropical Theobroma cacao tree. Cacao has been cultivated for at least three millennia and grows in Mexico, Central America, and Northern South America. The earliest known documentation of using cacao seeds is from around 1100 BC.

Since cacao tree seeds have a very intense, bitter taste, they must ferment to develop the flavor. Once fermented, processors dry, clean and roast the beans. After roasting, the shell is removed to produce cacao nibs. The cacao nibs are then put through a grinding process creating cocoa mass, which is pure chocolate in rough form. The cocoa mass is usually liquefied through a process creating chocolate liquor. During this process the chocolate liquor is made into two components: cocoa solids and cocoa butter.

What are xenoestrogens?
Xenoestrogens are chemicals that can interfere with and affect your natural hormones. They’re found in plastics and some cosmetics, hair products and medications. It’s therefore very common to be affected by these chemicals, particularly if you live in a more urban environment.
Xenoestrogens have a clever ability to copy the actions of oestrogen in the body, which is problematic as the body struggles to recognise fake from natural oestrogens. This can cause our hormones to malfunction and our body can either produce too little or too much oestrogen, which can worsen PMS symptoms.
As well as this, xenoestrogens can have negative effects on male and female fertility, breast development, hormone dependant cancers, hormonal balance, nervous system function, thyroid health, metabolism, and obesity.
Reducing the amount of xenoestrogens you are exposed to
can therefore be beneficial in supporting oestrogen balance.

precursor of a hormone – a substance that
your body converts to a hormone.

Quick Easy Fruit and Nut Stuffed Baked Pears
2 ripe pears, halved
¼ cup of chopped walnuts or pecans (or a combo of both)
3 tablespoons of raisins or dried cranberries (or a combo of both)
½ teaspoon of pumpkin pie spice, more for garnish
3 tablespoons of agave or maple syrup (or a combo of both), more for drizzling

Preheat the oven to 180 degrees C and line a baking sheet.
In a bowl, mix together the nuts, dried fruit, pumpkin pie spice, and agave or maple syrup until well-combined.
Using a melon baller or spoon, scoop out the seeds of the pears. Add a generous scoop to each innard of the pears.
If you’d like to drizzle on a little more sweetener or powder or a bit more pumpkin pie spice, feel free. (Can use nutmeg, ginger and cinnamon in place of spice)

Place in the oven and bake for 25 minutes.

Roasted Beetroot Sweet Potato/Kumara Salad
This roasted beetroot kumara salad with maple balsamic dressing is loaded with colour, flavour, and texture.

2 medium kumara cubed
2 large beets peeled and cubed
4 tablespoons of olive oil divided
1 teaspoon of salt divided
1 teaspoon of black pepper divided
½ cup of red onion very thinly sliced
2 tablespoons of lemon juice
1 tablespoon of balsamic vinegar
1 tablespoon of apple c***r vinegar
1 teaspoon of agave or maple syrup
⅓ cup of pecans or walnuts
1 cup of rocket or mesculin leaves
½ cup of vegan feta cheese

1. In a large bowl, toss the cubed sweet potatoes with 2 tablespoons of olive oil, ½ teaspoon of salt, and ½ teaspoon of black pepper. Spread them on one half of the baking sheet.
2. In the same bowl, toss the cubed beets with the remaining 2 tablespoons of olive oil, ½ teaspoon of salt, and ½ teaspoon of black pepper. Spread them on the other half of the baking sheet.
3. Roast for about 30 minutes or until the beets are tender. Check the sweet potatoes at the 20–25 minute mark and remove them early if they begin to burn, as they cook faster than beets.
4. Meanwhile, place the thinly sliced red onions in a large salad bowl. Add the lemon juice and a pinch of salt, and mix well. Set aside to marinate while the vegetables roast.
5. Once the beets and sweet potatoes are done, remove from the oven and allow them to cool slightly on a wire rack.
6. To the bowl with the marinated onions, add the balsamic vinegar, apple c***r vinegar, agave or maple syrup, and a pinch of black pepper. Slowly whisk in the dressing and set aside.
7. Add the rocket to the bowl and toss well to coat with the dressing. Add the roasted vegetables and pecans, then toss again gently to combine.
8. Top with vegan feta and serve immediately.com

My daughter bought a Pomegranate last night in the grocery shopping, and I am looking forward to putting the delicious sweet and slightly tart seeds into some salads this weekend.
