I walked in the door almost 14 years ago!

I now walk out to start a new adventure with and our family in Maastricht. Who I thank for believing me and trusting me with our future!

Gained a work family that I'll always treasure

A lot has happened!

And it has all lead to the start of another adventure in Maastricht UAC, Netherlands as an ATC Unit Instructor! Yes I have to hang up my headset, but it is without any regrets!

Thank you to all in Shannon ATC! We've had each other's backs, we've had more ups than downs and I have nothing but fond memories!

Pea & Prawn Risotto!

Struggle to get your kids to eat any fish!
Try this risotto! Serves 4 or 2 adults, 3 kids!

Don't be afraid of it. Follow this recipe and you'll have perfect risotto everytime!

Ingredients
270g Frozen Prawns
1 Cup Garden Peas
2 Shallots
2 Garlic Cloves
75g Grana Padano/Parmesan
2 Tbsp Butter
1 litre Vegetable stock (2 stock pots)
250g Arborio Rice

Salt, black pepper, smoked paprika, basil & oregano to season

Place 1 tbsp butter in a large pan
Add chopped shallots & your chopped Garlic Cloves
Once onion is softened, add your prawns and season.
Add Arborio Rice and boil water for stock.
Add a third of the stock plus peas to the pan and stir.
This is the important part. Add more stock, only when the rice has almost absorbed the stock. Take your time, have a glass of wine😜.

It will take 20 mins or so for the rice to absorb all the stock. I add it a third at a time.

Once all your stock has been absorbed, add the other Tbsp of butter to give it the creaminess and also add most of your Parmesan, keeping a small bit to garnish!

Top it off with some cracked black pepper and enjoy with your family or with your significant other on date night!
