And that was the end of a new beginning.

Countless hours of listening, practicing, learning, and being inspired.
I am deeply grateful for everything I have learned, the beautiful people I have met, and the many hours we spent sharing common interests, supporting one another, and growing together.

Our shared goal has always been to help others flourish, physically, psychologically, and emotionally. And that makes this journey even more meaningful.

I am truly excited to share what I have learned and to continue promoting health and wellness in the best ways I can.

Today we celebrate and honor the love, strength, guidance, and sacrifices of fathers who have helped shape our lives. To the fathers who are with us, thank you for your unwavering support and care. And to the fathers who are no longer with us, especially those in Heaven, your love and memories continue to live in our hearts every day.

Life is all about learning, growing, and in my case, promoting health in the most effective and meaningful way possible.

For weeks, I've been surrounded by the same beautiful people, all sharing common goals, passions, and dreams.

Weeks of learning.
Weeks of practising.
Weeks of studying.
Weeks of sleepless nights.
Weeks of worrying.
Weeks of juggling work, family life, and revision.

Nothing comes easy, but with hard work, determination, and dedication, anything is possible.

What a beautiful journey it has been. Along the way, I've met incredible people, made amazing new friends, and been fortunate enough to learn from truly inspiring teachers. Together, we've supported one another, grown together, and worked towards a common goal: to teach, to inspire, to help people feel better in their own skin, and most importantly, to improve their health and wellbeing.

I cannot thank my teachers enough: Gianluca Blandi, Sylvana, and Monika. Your passion, professionalism, encouragement, and unwavering support have been truly inspiring. You guided us every step of the way, and I am incredibly grateful ๐Ÿ™

Without a doubt, I couldn't have done this without my husband. Thank you for supporting me, taking care of the kids, keeping everything together, and calming me down during the moments when stress got the better of me ๐Ÿ˜ฌ

Healthy Caramel Slice & Cup

112 g Oat flour
85 g Desiccated Coconut
3 tablespoons Maple Syrup
80 ml Coconut Oil - melted

Healthy Date Caramel Layer
185 g Medjool Dates pitted
80 ml Maple Syrup
80 ml Unsalted Peanut Butter
2 tablespoons Coconut Oil
2 tablespoons Water
1 teaspoon Vanilla Extract
ยผ teaspoon Salt

Chocolate Topping
85 g Dark Chocolate
1 tablespoon Coconut Oil

In a mixing bowl, add: desiccated coconut, oat flour, maple syrup, and melted coconut oil.
Stir with a spatula first, then squeeze with your hand to make sure all the ingredients come together and stick together.
Press the shortbread crumble tightly onto the mould.
Freeze 10 minutes while you are making the caramel layer.

Caramel Filling
In a food processor, add pitted dates (I boiled them first in a pot), peanut butter, melted coconut oil, water, maple syrup, salt, and vanilla.
Process until a sticky thick caramel paste forms. Repeat until all the ingredients form a consistent thick date paste.
Get mould out of the freezer and pour the caramel paste onto each slice. Press with a silicone spatula into an even layer.
Return mould to the freezer for 10 minutes while you melt the chocolate.

Chocolate Layer
Melt the dark chocolate with coconut oil, in a microwave safe bowl or in a pot.
Drizzle the melted chocolate all over the bars and return to the freezer for 12-15 minutes to harden the chocolate.
Remove the mould from the freezer, and pull out the bars...and enjoy ๐Ÿ˜‰
