『江戸前寿司』 Edo-mae Zushi 🍣 -Edo-style sushi-

羽田空港で、本格江戸前寿司をご馳走になって、感激・・🤩 いただいたのは、ホタテ、蟹などの冬の味覚が楽しめる季節限定の「冬のにぎり」🍣。
江戸前寿司の頂点を極める 創業140年の老舗「銀座寿司幸本店」の姉妹店「羽田寿司幸」にて。

- I was thrilled to be able to eat authentic Edo-mae sushi at Haneda Airport. What we had was the seasonal “Winter Nigiri” which you can enjoy winter flavors such as scallop and crab. At Haneda Sushikō, a sister restaurant of the 140-year-old long-established Ginza Sushikō, the pinnacle of Edomae sushi. Thank you my sis. 🧑🏻💕 with

『江戸前』 えどまえ Edo-mae means Japanese style.
Edo is the former name of Tokyo. It means the gate of the river where the river meets the sea.
“Edomae” means food made from fish caught in Edo Bay(in front of Edo)or the sea near Edo, or food from the area of Edo. Another meaning is that ‘mae’ in Edomae is similar to ‘mae’ in 『男前』Otoko-mae (manly, handsome) or 『腕前』 Ude-mae(ability, skill), In other words, “Edo style.”

Additionally, Sushi is pronounced Zushi when it is the last part of a compound word. e.g. Nigiri-zushi, Edomae-zushi.

『加賀手まり』 かがてまり Kaga temari 🧶 『十二菊』 じゅうにきく Jūni kiku 🌼

「加賀」 かが Kaga refers to the southern part of present-day Ishikawa Prefecture before its official name was changed to Kanazawa Domain in the Meiji period.(明治 めいじ Meiji 1868 – 1912)

「手まり」 てまり Temari literally means Handball. 🏀
「手」 て Te is Hand 🤚🏻, 「まり」 Mari means Toy ball
「手まり」 Temari are Toys that have existed in Japan since ancient times. 🧶

Since temari was a plaything for girls, it symbolizes femininity and cuteness, and it is said to be used to “Bind a good match” because it is made using long thread, and “Build a harmonious family(like this round shaped).
“Wish round everything off nicely” is the message from a parent wishing for their daughter's happiness.

『加賀手まり』 かがてまり Kaga temari 🧶 is said to have originated from the Tokugawa family during the Edo period, when Princess Tamahime, who married the lord of the Kaga domain at the age of three, brought it with her.
In Kanazawa "Kaga" at that time, the custom of giving Temari as a talisman to daughters getting married took root.

Even now in Kanazawa, when a daughter gets married, it is customary to give it to her to wish her happiness.

『十二菊』 じゅうにきく』 Jūni kiku : Twelve chrysanthemums are a pattern that has been passed down in Kanazawa since ancient times, and the chrysanthemum pattern, which is intricately embroidered inside a regular dodecahedron, is Kaga Temari's masterpiece.
