🔺Varieties

▫️Garganega
According to research by scientists, garganega is one of the oldest local Italian varieties. It is not only found in Veneto, but also grows under the name Grecanico dorato in Sicily. Garganega wines are characterized by aromas of white flowers, yellow apples and almonds. They are not overly expressive, but have a pleasant, refreshing acidity.

▫️Trebbiano di soave
The second variety allowed for Soave wines is Trebbiano di Soave, which has nothing in common with the main Italian Trebbiano.
It is distinguished by its high acidity and fresh aromas of citrus fruits, green apple and almond flowers.

🔺Peculiarities

Chaptalise - what is it?

💬 Sweetening the must with sugar.

❗️This wine-making technique is not meant to make the wine sweeter. And in order to increase the amount of alcohol in wine. The added sugar is converted into alcohol by the yeast. This technique was invented back in 1800 by the Frenchman Chaptal, it is allowed in some regions and serves to enable winemakers to make wine with a sufficient level of alcohol in bad years (cold, rainy).
