SOAVE is a small settlement 20 km east of Verona, surrounded by an imposing medieval wall❤️
It is known primarily for its castle hanging over the city and for its wine, which was admired by the ancients.
🔺Varieties
▫️Garganega
According to research by scientists, garganega is one of the oldest local Italian varieties. It is not only found in Veneto, but also grows under the name Grecanico dorato in Sicily. Garganega wines are characterized by aromas of white flowers, yellow apples and almonds. They are not overly expressive, but have a pleasant, refreshing acidity.
▫️Trebbiano di soave
The second variety allowed for Soave wines is Trebbiano di Soave, which has nothing in common with the main Italian Trebbiano.
It is distinguished by its high acidity and fresh aromas of citrus fruits, green apple and almond flowers.
🔺Peculiarities
The traditional method of molding vines in the region is the pergola, which allows it to cope well with moisture and harvest a bountiful harvest. The best vineyards in the zone are located on the hills, where natural drainage limits the productivity of garganega, which allows for more complex and concentrated wines. It is customary to drink Soave wines young, but the best samples are perfectly stored, developing a light kerosene note in the bottle, almost like Riesling
