How to Prepare Muchroom and Asparagus Rice
Ingredients
1.140 g Carnaroli rice
2. 5 asparagus
3. 200 gr mixed mushrooms with frozen
4. porcini (or fresh as you like)
5. Shallot to taste
6. Salt and pepper
7. Extra virgin olive oil
8. Parmesan 4 spoons
9. Parsley to taste
10. Fresh Tomato
11. Broth
Instructions for cooking
• Let's start by cleaning the asparagus, cutting the stems into slices and keeping the tips whole.
• Cubed the tomatoes
• Then take a casserole or frying pan and sauté with extra virgin olive oil and shallots.
• Once sautéed, add the asparagus and mushrooms and brown for about ten minutes, turning them.
• Then add the rice and toast.
• Once the rice has been toasted, add the broth previously prepared with the to the mushrooms and gradually incorporate, adding the cubed tomatoes, a little salt and pepper.
• When it dries up, add more broth.
• More or less the risotto will cook in about 18 minutes, when the risotto is ready, turn the fire off and add the Parmesan and the parsley.
It is now ready to serve.
