HOW DOES FREEZING HELP WITH WEIGHT LOSS??? ⬇️
How does freezing change the properties of foods???
It’s related to the fact that ice crystals change the structure of plant tissues, making some nutrients and compounds more accessible.
So, what foods do you freeze? Berries? Vegetables?
➡️ Blueberries. After thawing, anthocyanins become more accessible because the cell walls are broken down. These pigments give blueberries their rich color and have antioxidant properties.
➡️ Carrots. Frozen carrots can contain more available beta-carotene than “fresh” carrots that have been sitting in the refrigerator. During freezing, the pigment becomes more concentrated and the ice crystals make it more accessible. The same carrot — more available vitamin A.
➡️ Bananas. After freezing and thawing, their structure becomes softer. This makes them perfect for smoothies, desserts and homemade ice cream, while some of the dietary fiber becomes more accessible for digestion.
➡️ Lemon. Frozen peas can contain more vitamin E than “fresh” peas that have been sitting in the refrigerator — fresh produce can lose nutrients over time after harvesting. Freezing acts like a pause button on freshness.
➡️ Bread. Freezing and then thawing bread can actually change the structure of its starch. Research shows that this may reduce the glycemic response compared with fresh bread, although the effect depends on the type of bread and how it is prepared.
➡️ Broccoli. Frozen broccoli can often retain more vitamin C than “fresh” broccoli that has been sitting on the shelf, because fresh vegetables can lose nutrients over time. Freezing slows this degradation. Fresh isn’t always better.
Freezing isn’t just a convenient way to store food — it can also help preserve many nutrients and, in some cases, even change the properties of a food.
