💚 Quick Pea & Mint Soup

This Pea & Mint Soup is full of flavour and uses lovely seasonal ingredients. Perfect for lunch with some crusty bread or enjoyed on its own. Healthy eating really can be simple!

Serves 4 | Ready in about 15 minutes

Ingredients

* 1 tbsp olive oil
* 1 onion, chopped
* 500g frozen peas
* 750ml vegetable stock
* Small handful of fresh mint leaves
* 2 tbsp Greek yogurt or crème fraîche (optional)
* Salt and pepper to taste

Method

1. Heat the olive oil in a saucepan and gently soften the onion for 5 minutes.
2. Add the peas and pour in the vegetable stock.
3. Bring to a gentle simmer and cook for 5–7 minutes.
4. Add the mint leaves.
5. Blend until smooth using a hand blender.
6. Stir in the yogurt or crème fraîche if using.
7. Season with salt and pepper and serve warm.

Warm Salmon & Asparagus Salad

Serves 2 | Ready in about 25 minutes

Ingredients

* 2 salmon fillets
* 250g baby potatoes, halved
* 150g asparagus, woody ends removed
* 1 tbsp olive oil
* Juice of ½ lemon
* Handful of mixed salad leaves or spinach
* Salt and black pepper
* Optional: sprinkle of fresh herbs (parsley or dill)

Method

1. Heat the oven to 200°C (180°C fan).
2. Put the halved baby potatoes onto a baking tray, drizzle with half the olive oil and season with salt and pepper. Roast for 20 minutes.
3. Add the asparagus to the tray and place the salmon fillets alongside. Drizzle with the remaining olive oil and a little lemon juice.
4. Return to the oven for 12–15 minutes, until the salmon is cooked through and flakes easily.
5. Arrange the salad leaves on two plates and top with the warm potatoes, asparagus and salmon.
