π Herby wholegrain mustard quinoa with balsamic glazed hake π
A quick and tasty dinner packed full of fibre, flavour and protein πͺπΌ
You can use a different fish, chicken or tofu and mix up the veg depending on what you have in!
Ingredients
ππΌ 100g dried quinoa (or use precooked pack)
ππΌ Finely chopped onion, pepper, mushrooms and a large handful of spinach
ππΌ 1 stock cube
ππΌ 1tbsp wholegrain mustard
ππΌ 1tbsp garlic (purΓ©e,dried or fresh)
ππΌ 1tsp each of dried rosemary and thyme
ππΌ1 tbsp tomato puree
ππΌ juice of half a lemon
ππΌ squeeze of honey
ππΌ 2 fillets of hake (or alternative)
ππΌ salt and pepper
ππΌ balsamic glaze to finish
Add the dried quinoa to a pan of boiling water (around 500mls) and dissolve the cube in it. Allow to cook for around 20 minutes until almost all of the water is absorbed.
Meanwhile, pan fry the veggies with the garlic and herbs for 5-10 minutes.
Place the hake on a foiled sheet season with salt and pepper. Cook in air fryer or oven for 10-12 minutes at 180 degrees.
Add in the wholegrain mustard, lemon, honey and tomato paste to the vegetable mixture with a splash of water to combine.
Then stir in the cooked quinoa and allow everything to simmer for a few minutes.
Once your fish is cooked, serve this on top of the quinoa with an expertly drizzle of balsamic glaze ππΌ
