Lime Vinaigrette
So quick and easy to make

1/4 cup lime juice
1/2 cup extra-virgin olive oil (or avocado oil)
1 clove garlic, smashed, peeled and minced
2 tablespoons plus 1 teaspoon honey or pure maple syrup
1 teaspoon Dijon mustard
2 tablespoons fresh coriander, finely chopped
1/4 - 1/2 teaspoon cumin powder
salt and freshly ground black pepper to taste

Method
Add ingredients to a mason jar and shake well until blended. Refrigerate before using.
Store in an air-tight container in the refrigerator. If properly stored, it should last up to 5 days.

Lemon and Garlic sauted Green beans
Delicious side dish for fish/poultry or a vegetarian alternative
You will need 300g green beans trimmed, 2 garlic cloves/or garlic paste, 2 tbsp olive oil, 1 Lemon
Method
Cook the green beans in boiling water for 2-3 mins until just tender, then drain well and steam-dry for a min. Heat the garlic/paste in the olive oil, and add the juice of half a lemon. Then add the beans, season and serve

Cauliflower rice - a nice and healthy alternative to traditional rice, and so easy to make
You just need 1 medium cauliflower, some coriander (fresh is best), and maybe some cumin seeds (these can be toasted)
Method
Cut the hard core and stalks from the cauliflower and pulse in a food processor to make grains the size of rice. Tip into a heatproof bowl, cover with cling film, then pierce and microwave for 7 mins on high – there is no need to add any water. Stir in the coriander. For spicier rice, add some toasted cumin seeds.

Olive Oil and lemon dressing
So easy to make
Squeeze in 1/4 cup fresh lemon juice. Add to that 1/2 cup olive oil ("good olive oil," of course). Sprinkle in 1 teaspoon of salt and 1/2 teaspoon of freshly ground black pepper, then whisk the whole thing together until combined.
Drizzle over your salad.

So, it's been a while since I posted for the online side of Motivational Fitness. We have taken the decision, not lightly, to stop offering this an an option. Whilst we thoroughly enjoyed creating the programs, take up was lower than expected. And we are not marketing experts, so creating enough material to post multiple times a day to reach a wider audience was very hard. Gym organisations creating their own programs, which come free with a membership also took it's toll.
So this page will promote the work that Gary does in the Gym Group, Sunderland.
I will keep you updated on spaces that he has available, and on the Boxfit class that occurs every Saturday.
I will also add posts which I hope that you enjoy reading. Some tips, some recipes etc.
We would like to thank everyone for your support, I won't mention names, but you know who you are - so thanks so much!
