Lime Vinaigrette
So quick and easy to make
1/4 cup lime juice
1/2 cup extra-virgin olive oil (or avocado oil)
1 clove garlic, smashed, peeled and minced
2 tablespoons plus 1 teaspoon honey or pure maple syrup
1 teaspoon Dijon mustard
2 tablespoons fresh coriander, finely chopped
1/4 - 1/2 teaspoon cumin powder
salt and freshly ground black pepper to taste
Method
Add ingredients to a mason jar and shake well until blended. Refrigerate before using.
Store in an air-tight container in the refrigerator. If properly stored, it should last up to 5 days.
