Your nutrition shouldn’t be complicated

As much as I love a new recipe and cooking in general, I always save that for a fun weekend activity

During the week when i’m busy, the last thing I need to be doing is thinking about what i’m eating or spending more time in the kitchen than necessary

Doesn’t mean you necessarily *need* to eat the same thing every single day, especially for dinner if your breakfasts and lunches are always prepped ahead for work

Instead i’ll usually prep components of a meal OR keep my protein source the same but on a Monday maybe i’ll have bolognese & on the Tuesday use the mince for chilli instead

✨same but different✨ and definitely not complicated! Easy way to trick others in your household too😆

I have some chicken and some mince to eat up this week so i’ve prepped some spicy rice in the slow cooker (only takes and hour so easy to do before work)

Basically just whack in👇🏼

🫑 Pepper
🧅 Onion
🌶️ Chilli flakes
🥄 Paprika & Turmeric
🧂 Salt & Pepper
🍚 Your portions of rice
🍗 Chicken stock
💦 Water to cover

1 hour in the slow cooker on high whilst you get ready, then its in the fridge ready to assemble later!🤪

Where are my almond croissant lovers because you’re gonna wanna try these🙋🏼‍♀️

Ingredients👇🏼

For the base:

1 banana
60g oats / oat bran
salt
baking powder
almond extract
5g almond flour (ground almonds)
100ml egg whites / 1 egg
100g 0% greek yogurt

For the topping:

5g almond flour
10ml maple syrup
10g almond butter
10ml milk
10g flaked almonds
icing sugar to dust

Don’t mean to toot my own horn but that flatbread was DELICIOUS

Ingredients👇🏼

For the chicken:
• chicken breast
• 0% greek yogurt
• dried corinader
• garam masala
• cumin
• onion powder
• garlic powder
• paprika
• ginger
• salt
• pepper
• olive oil for frying

For the flatbread & filling:
• plain flour
• more greek yogurt
• salt
• ground almonds
• dessicated coconut
• butter
• raisins

Other:
• tomato
• red onion
• lemon juice
• cucumber
• even more greek yogurt
• mint
• mango chutney

Will be prepping this to have on repeat for the forseeable but it’s perfect for a Friday night fakeaway🥘

As an example I used to tell myself I was restricted by tracking calories and that’s why I was constantly falling off track

Now each journey is individual and I’m not saying it’s the right approach for everyone or a lifelong tool but it applies elsewhere too

In reality I just upset that I needed to improve my nutrition and not just continue eating whatever (like people online with insane physiques *seemed* to do)

I was convinced it was holding me back but the numbers were never the issue, it was my mindset and habits

I’d grab a coffee after breakfast before work and not be able to resist getting a cake too (which theres nothing wrong with but my goals required the temporary compromise)

I’d implement it into My Fitness Pal and quickly realise that if I wanted to meet my targets I’d just have to eat 400g of chicken and veg across the rest of the day, which since it was only 9am I was absolutely not going to stick to

I wasn’t restricted by tracking in this instance, I was restricted by my choices

I could’ve had 4-5 nutrition dense meals that supported my goals, kept me full and still ended the day with some chocolate too but I chose to act on impulse for what I wanted in that moment instead

This obviously led me to overeat and ‘try again’ tomorrow (btw the cycle just repeated itself)

You don’t have to eliminate all elements of enjoyment in your life in order to get to where you want to be, you just need to be willing to act in line with your goals for the majority of the time
