Bored of potatoes? Try this ‘treat’ side dish

Ingredients
Potatoes
Leak
Garlic
Double cream
Parmesan
Cheddar cheese
Panko breadcrumbs
Salt & pepper

Method
Peel and cut potatoes ‘thick’ parboil
Slice leek, minced garlic to taste - cook off in k**b of butter, add cream, Parmesan and seasoning to taste
Transfer potatoes and leek mix in to ovenproof dish, bake in oven 200c until potatoes soft. Last 5 mins sprinkle over panko breadcrumbs and grate over cheddar cheese. Return to oven until golden.

Need something quick…. Try this homemade frittata, healthy meal and perfect for lunch box.

Ingredients
Eggs
New potatoes
Mushrooms
Onion
Garlic
Cherry Tomatoes
Parmesan cheese
Seasoning
Olive oil and k**b of butter

Method
Cut potatoes in to slices, boil until soft
Fry off onions, garlic, tomatoes and mushrooms (dash olive oil and butter)
Whisk eggs in a bowl with Parmesan cheese
Transfer potatoes and onion mix in to the eggs
Bake in the oven in oven proof dish until the eggs are thoroughly cooked through 200c

Serve with a large mixed salad…..easy!

Stair Masters.......here at Fit For Keeps we love to get outdoors. Friday’s we challenge ourselves with stair sprints at our local train station. A great way to switch off, burn off a good few calories and get fit!

Can’t wait to see my first client this morning in the GYM!!! Working on zoom has been ok but I’m hoping to ditch the screen for good this time!
