SLOW COOK BEEF & BUTTERNUT SQUASH CURRY!

Okay… this is delicious! It IS a little more effort - but it is 100% worth it and gives you loads of leftovers!

And even though it IS a bit more effort, it’s really only 30 minutes of prep time, then 3 hours in the oven….

Serves 5
Calories: 391kcal
Protein: 45g

Anyway - here it is 👇

Ingredients:
1 x Medium onion
1 x 750g Diced lean beef (Aldi)
1 x Tikka Masala paste Jar (Aldi)
1 x Tin of tomatoes
1 x Tablespoon of oil (15ml)
1/2 a Butternut Squash
1 x Can of chickpeas
1 x Beef stock pot
1 x Squeeze of tomato puree (about a tablespoon)
4 x Frozen cubes of spinach (or half a bag of fresh leaves)

Method:
1. Chop half a butternut squash and cut into cubes
2. Spray with some fry lite oil and cook in the air fryer for 20 minutes at 200 degrees C, or in a normal oven for 30 minutes at 180 degrees
3. Whilst thats cooking, drizzle some oil in a pan and get the pan nice and hot
4. Add the diced beef, and brown
5. Once every piece is nice and brown, set aside
6. Add another drizzle of oil to the pan and add your chopped onion
7. Cook until it starts to soften
8. Add your jar of tikka paste, filling it up with a bit of water to make sure you get it all out
9. Cook for a couple of minutes, stirring regularly
10. Add your beef stock pot and big squeeze of tomato puree - give everything a good stir
11. Then add your tin of tomatoes, filling it up twice with water
12. Add your can of chickpeas, including the water
13. Your butternut squash should be nice and roasted, so add it to the curry
14. It’s now ready for the oven!
15. Cook for 3 hours at 160 degrees celsius
16. If using frozen spinach, half an hour before it’s ready from the cubes in - if using fresh just stir through right at the end when it’s finished cooking!

Serve with your favourite sides and enjoy!

🥔 I genuinely can’t believe people are still avoiding potatoes when they’re trying to lose weight 😮

Potatoes are one of the most filling, nutritious and affordable carbohydrate sources you can eat - so why are we still treating them like the enemy?

A few things to remember:

✨Carbs don’t stop fat loss. A calorie deficit does.

✨Potatoes are surprisingly filling. They have a high satiety value, meaning they can help keep you feeling fuller after a meal.

✨Your body NEEDS glucose. Your brain relies heavily on glucose for energy, and carbohydrates are an important source of it (our bodies break down the starch in carbs to create glucose)

✨Potatoes provide more than just carbs. They contain fibre, potassium, vitamin C and other micronutrients.

✨It’s what you put around them that can change the calories. A boiled or baked potato is very different calorie-wise from a mountain of butter, cheese and oil - although those foods aren’t “bad” either!

And perhaps most importantly…

You do NOT need to give up potatoes to lose weight 🥳

In fact, for many people, building meals around satisfying foods like potatoes can make a calorie deficit feel much easier to stick to.

So if potatoes have been on your “I can’t eat that while I’m losing weight” list…

Consider this your permission to put them back on the menu👏💁‍♀️

If you feel like you’ve lost the same half a stone over and over again… you’re not failing 🫶

You’ve probably just become really good at losing weight - but never had the tools or support to maintain it.

The cycle often looks something like this:

You decide it’s time to lose weight ➡️ you get motivated ➡️ you follow the plan perfectly ➡️ you lose some weight ➡️ life gets busy ➡️ the plan becomes harder to maintain ➡️ you stop ➡️ the weight comes back ➡️ you wait for Monday ➡️ and you start again.

And then you blame yourself for not having enough willpower!

But what if the problem isn’t you?

What if the problem is that the approach you’ve been using was never designed to be sustainable?

Because you shouldn’t have to spend your life being “good” Monday to Friday, avoiding foods you enjoy, forcing yourself through workouts you hate and waiting for the next “diet” to start.

You need to learn how to:

🏋️‍♀️ Train consistently without needing to exercise every day
🏖️ Handle weekends, holidays and busy weeks without feeling like you’ve ruined everything
💼🤒👶 Make adjustments when life gets in the way
📈 Maintain the habits that helped you achieve your goal

That’s the difference between losing weight and actually changing your lifestyle.

just checking you haven’t gone into myfitness pal and said you wanted to lose the most amount of weight in the shortest amount of time… 👀

Just checking you’re not using your favourite influencers daily different workouts to build your plan in the gym…

I LOVE what reformer has done getting more women moving their bodies, but if it’s the ONLY exercise you’re doing, you’re not going to get that “Pilates” body your aiming for

you don’t need to cut out carbs!!

You’re not forcing foods into you that you think are “healthy” even though you hate them right??

The uglier the better babes!!

You need a positive, encouraging network around you! If you’ve got friends or family that make negative comments about your desire to train, eat better and become an athlete mum - then chop them ❌❌❌

Unless you’re actually deficient in something, you don’t need supplements!

WHY MEAL PLANS DON’T WORK ❌❌❌

Does a meal plan actually teach you how to eat for you and your family?

This is one of the biggest differences between giving someone a meal plan and actually coaching them through nutrition.

You’re a busy mum! You do not need another thing to think about 😂
