I draw the seam with iron off pen, which helps guide me round the curve.
Sew on the line, trim off half the seam allowance.
Turn through and press.
Nice smooth curved ears.

On the stuffing hole, I sew seam tape to either side. This gives me a guide when I hand sew, and the strength to pull the stitches together.
The picture below is 5x closer, I use a curved needle and my stitches are about 3mm apart.
