This roasted butternut squash soup is rich in fiber, vitamins, and minerals, making it a nutritious and filling option for a weight loss-friendly autumn meal.
It's also a great way to enjoy the flavours of the season while staying on track with your health goals.

Roasted Butternut Squash Soup
Ingredients:
1 butternut squash
1 medium onion
2 cloves garlic
2 carrots
2 apples
1 litre vegetable stock
1 tsp olive oil
1 tsp dried thyme
1/2 tsp ground cinnamon
Salt and pepper to taste
Greek yogurt or low-fat sour cream (optional garnish)
Fresh parsley or chives (garnish)
Instructions:
Preheat your oven to 400Β°F (200Β°C).
Place the cubed butternut squash on a baking sheet, drizzle with olive oil, and season with salt, pepper, and dried thyme. Roast in the oven for about 30-35 minutes or until the squash is tender and slightly caramelized.
While the squash is roasting, heat a large pot over medium heat. Add a bit of olive oil, then add the chopped onions and carrots. SautΓ© for about 5 minutes until the onions are translucent.
Add the minced garlic and chopped apples to the pot and sautΓ© for another 2-3 minutes until the apples soften slightly.
When the roasted butternut squash is ready, add it to the pot along with the vegetable stock and ground cinnamon.
Bring the mixture to a boil, then reduce the heat, cover, and simmer for about 15-20 minutes.
Use a hand blender or transfer the soup to a blender (in batches if necessary) to puree until smooth. Be careful when blending hot liquids.
Return the soup to the pot and heat it through. If it's too thick, you can add more vegetable stock to reach your desired consistency.
Taste and adjust the seasoning with salt and pepper as needed.
Serve the soup hot, garnished with a dollop of Greek yogurt or low-fat sour cream, and a sprinkle of fresh parsley or chives if desired.
