Tandoori Chicken Burgers
Serves: 4
total time: 20 minutes
INGREDIENTS
450g chicken mince
45g dry breadcrumbs
2 tbsp prepared Tandoori paste 1 large egg
1 tbsp lemon juice
1 tsp lemon zest, finely grated 3⁄4 tsp salt
1⁄2 tsp ground black pepper
1⁄2 tsp ground cumin
1 dash hot sauce (optional)
4 wholegrain hamburger buns Sliced cucumbers and peaches or mango
Yoghurt or creamy dressing of your choosing

INSTRUCTIONS

Combine the chicken with the breadcrumbs, Tandoori paste, egg, lemon juice and zest, salt, pepper and cumin (and the hot sauce, if you like a bit of heat).
Shape the mixture to form 6 burger patties and refrigerate until ready to use.
Preheat your grill to medium and cook the patties for 10 to 12 minutes on each side, or until cooked all the way through.
Serve the burgers on buns and top with sliced cucumbers and peaches (or mango), and serve with a dollop of yoghurt or preferred creamy dressing.

BLACK FOREST OVERNIGHT OATS

TOTAL TIME: 10 MINUTES

INGREDIENTS
65g rolled oats
1 tbsp unsweetened cocoa powder 125ml unsweetened almond milk 1⁄4 tsp vanilla extract
1 tsp maple syrup
65g frozen dark cherries
1 tsp dark chocolate chips
Pinch salt
1⁄4 tsp ground cinnamon
25g whey chocolate protein

INSTRUCTIONS
To make this nutritious and easy breakfast, add all the ingredients except the chocolate chips into
a serving bowl and stir to combine. Cover with kitchen wrap and place in the fridge overnight, by which point the oats will have absorbed the delicious flavours of the maple syrup, vanilla and cherries.
When ready to serve, stir in the chocolate chips and some extra almond milk if needed.

BBQ CHICKEN TORTILLA PIZZA

INGREDIENTS
2 flour tortillas
1 white onion, diced
85g cooked chicken, shredded 50ml barbeque sauce
1 tsp balsamic vinegar
50g cherry tomatoes, sliced 100g mozzarella cheese, grated
50g Parmesan cheese, grated

INSTRUCTIONS
Begin by preheating your grill to a medium heat.
Place the tortillas under the grill for around 1 minute, or until they are lightly toasted all over – remember to watch the tortillas carefully as they will burn very easily. Once cooked, remove from the grill and set aside.
To soften the onion, gently sautΓ© in a pan for 5 minutes or, alternatively, cook them in a microwave for 2 minutes.
While the onion cooks, add the shredded chicken to a bowl and combine with the barbeque sauce and balsamic vinegar. To assemble the pizza, spread the tortillas with barbeque sauce and scatter over the chicken, onions and tomatoes. Top with the grated mozzarella and Parmesan before placing the pizza under the grill once again.
Once the cheese has melted and is beginning to brown, remove the pizza from the grill and serve.

100ml sour cream
1 clove garlic, minced
2 tbsp fresh dill, diced
1 lemon, zested plus 1 tbsp juiced 200g smoked salmon
1/2 red onion, finely sliced
2 tbsp baby capers

Cook the flatbread according to packet instructions.
Meanwhile, mix together the goat’s cheese, sour cream, garlic, dill, lemon zest and lemon juice.
Spread the cheese spread across the flatbread and top with flaked smoked salmon, red onion and capers.
Cut into squares and transfer to a large serving platter.

125ml milk
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground ginger
1/4 tsp ground cloves
4 slices rye sandwich bread (gluten-free if required) 1 tbsp butter
1 tbsp powdered sugar

Start by whisking together the eggs, milk, cinnamon, nutmeg, ginger and cloves.
Submerge each slice of the bread in the liquid for about 20-30 seconds each side.
Add the butter to a large non-stick skillet and bring it to a medium heat.
Cook slices for about 4 minutes each side. Turn the heat right up at the end to crisp it up a little more.
Serve with powdered sugar and berries.
