Mexican style eggs 🍳

Ingredients:
-olive oil
-1/2 onion (thinly sliced)
-3 cloves garlic (chopped)
-1/2 red pepper (cubed)
-2 tomatoes (chopped)
-handful of spinach
-1/2tsp chilli powder
-1/2tsp ground coriander
-salt and pepper (to taste)
-3 whole eggs
-feta (optional to top)
-crushed red chilli flakes (optional to top)

Method:
-Cook onions and garlic in pan with olive oil, until golden brown
-Add red pepper, tomatoes, spinach and cook until softened (mash tomatoes to form salsa like mixture)
-Add chilli powder, ground coriander, salt and pepper
-Make 3 wells/dips in mixture and crack one egg into each well (keep yolk intact!)
-Cover with lid and cook until eggs set or transfer to grill
-Once cooked, sprinkle over some crumbled feta and crushed red chillies

Healthy breakfast cookies 🍪

Who doesn’t love cookies!? Great to make in batches and you can get the kids involved! Perfect for when you’re on the go, are limited for time or just as a healthy snack.
Here’s a super simple recipe, feel free to add extras like dried fruit with the chocolate chips- be creative 😉

Ingredients:
-3 large ripe bananas
-1/2 cup almond/peanut butter
-1tbsp butter
-2tbsp honey
-1tsp vanilla extract
-2 1/2 cup oats
-1tsp baking powder
-1/4tsp ground cinnamon
-1/2 cup dark chocolate chips

Method:
-Preheat oven to 180degCel (gas 4)
-In a large bowl, mash bananas with a fork
-Stir in nut butter, butter, honey and vanilla extract until smooth
-Separately, mix together oats, baking powder and ground cinnamon
-Add oat mixture to banana mixture and stir until combined
-Stir in chocolate chips
-Line a tray with baking parchment and drop spoonfuls (~1tbsp) onto the sheet, leaving a small gap between each one
-Bake for 12-14mins (should be golden in colour)
-Transfer to wire rack and let cool

HOMEMADE GRANOLA RECIPE

Absolutely love granola, it’s so versatile and is full of fibre, slow-releasing carbohydrates, healthy fats and protein to fuel you for the rest of the day. So here’s a simple recipe to try at home. Store in an airtight container and it will last for up to a month- so much better than a lot of the sugary options out there!Can be served with milk, yoghurt or even eaten as a snack on its own..enjoy!

Ingredients:
-200g rolled oats
-100g mixed nuts
-25g linseeds
-2 tbsp chia seeds
-2tbsp desiccated coconut
-1tbsp ground cinnamon (more if you like)
-1/2tsp grated fresh ginger
-2tbsp coconut oil
-1tsp vanilla essence
-honey (to taste)
-100g chopped dates (can use any dried fruit e.g. raisins, apricots, figs)

Method:
-Preheat oven to 180 degrees Celsius
-Combine oats, nuts, seeds, desiccated coconut, ground cinnamon and grated ginger together in a large mixing bowl, then spread in a tray lined with baking paper
-Separately, melt the coconut oil in the microwave, then add the vanilla essence and honey
-Pour the oil mixture over the oat mixture and using a spoon (or your hands which I prefer!), mix the two together
-Oven cook for 15-20mins until golden in colour
-Remove from the oven and leave to cool for 10-15mins (this is where it crisps up!)
-Store in an airtight container
