🍝🌿 HEALTHY SPRING GREENS CARBONARA
I LOVE all food 😍 and I’m definitely not about cutting out the foods we enjoy!
Instead, I try my best to find recipes that still taste amazing but are loaded with goodness.. plenty of protein, veggies and nutrients while still feeling like proper comfort food. 💗
And this one looks DELISH! 🤤
Serves 2 | Approx. 460 kcal & 22g protein per serving
🛒 INGREDIENTS
🍝 140g spaghetti
🥒 1 large courgette (or 2 small), peeled into ribbons or julienned
🫛 100g frozen peas
🥬 1 large leek, finely sliced
🧄 1 tsp minced garlic
🥚 1 large egg + 1 egg yolk
🧀 25g grated Parmesan
🥓 2–3 slices Parma ham, diced
🌶️ Lots of black pepper
Optional protein boost:
🍗 120g cooked chicken breast
🍤 Prawns
🐟 Flaked hot-smoked salmon
👩🏼🍳 METHOD
Whisk together the egg, egg yolk, Parmesan and plenty of black pepper in a small bowl and set aside.
Heat a non-stick pan over a medium heat with a little oil. Add the diced Parma ham and sauté until it starts to crisp. Add the garlic and cook for another minute.
Add the sliced leek and cook until soft, adding a splash of water if needed.
Add the frozen peas and cook for 2–3 minutes, then stir through the courgette ribbons and turn off the heat.
Meanwhile, cook the spaghetti in salted boiling water until al dente.
Transfer the cooked pasta straight into the pan with the vegetables and Parma ham, taking a little pasta water with it.
Turn the heat to LOW and quickly stir through the egg and Parmesan mixture. The residual heat will gently cook the egg and create that lovely silky carbonara sauce. Add a splash of pasta water if needed.
Keep the heat low so the egg doesn't scramble!
If you’re adding chicken, prawns or salmon, stir through at the end to warm.
Serve immediately with a little extra Parmesan and black pepper. 😍
