Weekend Menu 🏋️‍♀️🥐☕️🥰

Had my 6am girls in then headed straight off to our favourite place for a chill couple of days. ⛰️

Making the most of the scottish summer while it still lasts 🤞🏼

Coffee stops, beach walks , good food & my boys is the perfect way to fill up my cup. 🧘🏽‍♀️🧋

20 Minute Meals 🍗🫑🌶️

The easiest dish that I have on rotation in my meal prep.

🍴Chicken Fajita & Sweet Potato 🍴

For 4 Portions ⬇️
> 520g Chicken
> 130g ish Sweet Potato per portion
> Any veggies of choice - I used courgette, pepper & baby corn
> Chipotle paste, fajita seasoning & cajun seasoning
> Mutti arrabbiata sauce - what I had left in the fridge


• Dice & coat chicken in seasonings & paste
• Bang into airfry for 10 min
• Dice & coat veg of choice with same seasonings & paste
•Bang into airfry with chicken for additional 10 mins
• Cut sweet potato and place skin side up & place in roast/oven. I only cooked 2 days worth here and used avocado oil spray on mine.
• Finally I added leftover arrabbiata sauce to cooked chicken fajita mix.

Cook once - Get 4 meals. Dont tell me meal prep is hard 🥱🥱🥱

Once spaces are gone the team will be at capacity again with no future intakes planned.

Its been a busy one. Two 2-day weddings, a birthday trip and my bro & dads bday all in a week - the best kind of celebrations 🎉

A gorgeous week spent with loved ones but im ready for routine & to be locked in again 👏🏻
