I get a lot of questions about carbs and specifically, when you should and should not eat them.
Some people believe eating carbs after a certain time of night makes you fat, but that is a myth. Carbs will only make you fat when:
Your net calorie intake is too high
Your activity levels are too low
Of course, if you are already out of shape and insulin resistant, eating too many carbs will lead to faster weight gain. Arguably, at night time in this specific context could make things worse because you're not active before bed, therefore your insulin resistance could be compounded.
However, if you are following a diet which gives you the correct numbers to hit each day and you're eating frequent meals, this should not be an issue.
Does this mean you should eat carbs at night?
It depends
1) If you're training late at night, you need carbs post-workout for fast recovery.
2) If you struggle with sleep, carbs can help send you to sleep by stimulating serotonin
3) If you are carrying a lot of muscle and are pretty lean, having some carbs later in the day can help avoid you flattening out too much during the night
